Abstract: Penerapan sistem keamanan pangan seperti GMP dan SSOP merupakan upaya penting dalam menjamin mutu dan keamanan produk pangan olahan. Penelitian ini dilakukan di PT XYZ dengan tujuan mengevaluasi penerapan GMP dan SSOP serta memberikan rekomendasi perbaikan terhadap aspek yang belum sesuai standar. Metode yang digunakan meliputi observasi, wawancara, dokumentasi, dan studi literatur. Penilaian dilakukan menggunakan checklist yang telah disesuaikan dengan keadaan di perusahaan. Evaluasi awal menunjukkan terdapat enam aspek GMP yang belum memenuhi standar dengan total persentase penyimpangan sebesar 6,25%. Pada penerapan SSOP terdapat empat aspek yang belum memenuhi standar dengan total persentase penyimpangan sebesar 6,04%. Rekomendasi perbaikan disusun berdasarkan temuan di lapangan dan dilakukan perbaikan oleh pihak perusahaan. Hasil evaluasi lanjutan menunjukkan adanya peningkatan signifikan yang dikonfirmasi melalui uji statistik Wilcoxon Signed Rank Test. Hasil penelitian ini menunjukkan bahwa perbaikan yang diterapkan efektif dalam meningkatkan penerapan GMP dan SSOP di PT XYZ.
The implementation of food safety systems such as GMP and SSOP is an important effort to ensure the quality and safety of processed food products. This study was conducted at PT XYZ with the aim of evaluating the implementation of GMP and SSOP and providing improvement recommendations for aspects that do not yet meet the standards. The methods used included observation, interviews, documentation, and literature review. The assessment was carried out using a checklist adapted to the company’s conditions. The initial evaluation showed that six aspects of GMP did not meet the standards with a total deviation percentage of 6,25%. In the SSOP implementation four aspects did not meet the standards with a total deviation percentage of 6,04%. Improvement recommendations were developed based on field findings and corrective actions were carried out by the company. The follow-up evaluation showed a significant improvement that confirmed by the Wilcoxon Signed Rank Test. The results of this study indicate that the implemented improvements were effective in enhancing the application of GMP and SSOP at PT XYZ.
