| Abstract: | Meningkatnya tuntutan konsumen terhadap produk pangan olahan yang aman dan bermutu menjadikan penerapan Cara Produksi Pangan Olahan yang Baik (CPPOB) sebagai kewajiban bagi pelaku usaha. Namun, banyak UMK masih menghadapi kendala dalam mengajukan izin penerapan CPPOB (IP-CPPOB), yang merupakan syarat untuk memperoleh izin edar MD dari BPOM. Penelitian ini bertujuan untuk mengetahui gap antara penerapan di UMK dengan ketentuan dalam regulasi serta mendampingi UMK XYZ dalam memperoleh IP-CPPOB. Pendampingan dilakukan melalui analisis kesenjangan, penyusunan rekomendasi perbaikan, implementasi perbaikan, serta penyusunan dokumen CPPOB, SOP, dan formulir pencatatan. Hasil analisis kesenjangan sebelum pendampingan menunjukan nilai kesesuaian sebesar 72,6% dengan peringkat C (Kurang). Berdasarkan hasil pemantauan akhir pendampingan dan perbaikan menyeluruh nilai kesesuaian meningkat menjadi 99,4% dengan peringkat sarana produksi A (Sangat Baik) seluruh dokumen telah disusun dan UMK XYZ berhasil memperoleh sertifikat IP-CPPOB dan menerapkan CPPOB di fasilitas produksinya. Increasing consumer demand for safe and quality processed food products has made the implementation of the Good Manufacturing Practices (GMP) an requirement for businesses. However, many MSES still face obstacles in applying for a GMP implementation permit (IP-GMP), which a requirements for obtaining an MD distribution permit from BPOM. This study aims to identify the gap between implementation at MSES and regulatory requirements, as well as to assist XYZ MSES in obtains the IP-GMP certificate. Assistance is through gap analysis, implementation recommendations of improvements, and preparation of GMP documents, SOPs, and recording forms. The results of the gap analysis before assistance showed a conformity value of 72.6% with a rating of C (Less). Based on the final monitoring results of the mentoring and comprehensive improvement, the conformity value increased to 99.4% with a production facility rating of A (Very Good) all documents have been prepared and assist XYZ MSES have successfully obtained IP-GMP certificates and implemented GMP in its production facilities. |
