| dc.description.abstract | Perkembangan industri pengolahan makanan memberikan dampak positif bagi produsen bahan dasar seperti breadcrumb dan produk bakery. Permintaan akan kedua produk berkualitas tersebut semakin meningkat. PT LeGitt Boga Mandiri sebagai salah satu produsen breadcrumb dan bakery mengalami tantangan dalam upaya peningkatan efisiensinya. Penelitian ini berfokus pada pemetaan value stream mapping (VSM) untuk mengidentifikasi pemborosan yang ada, seperti aliran material yang semrawut dan bolak-balik, potensi kontaminasi silang antar lini, serta pemborosan produk akibat adonan yang jatuh. Selanjutnya, penelitian ini bertujuan merancang ulang tata letak lini produksi menggunakan metode systematic layout planning (SLP) yang kemudian dievaluasi melalui simulasi anylogic dan analisis value stream mapping (VSM) future state. Hasil perancangan ulang yang disimulasikan menunjukkan, masalah teratasi dengan aliran material yang lebih lancar serta potensi pemborosan produk berkurang. Perbaikan tata letak ini juga memberikan pengaruh berupa peningkatan efisiensi yang ditunjukkan oleh penurunan rata-rata jarak tempuh material sebesar 20,24% dan rata-rata penurunan waktu transfer material sebesar 26,35%. Peningkatan efisiensi ini berdampak langsung pada peningkatan produktivitas yang berpotensi meningkatkan omzet perusahaan hingga Rp16.656.370 per bulan. Rekomendasi penambahan peralatan kerja untuk meminimalkan pemborosan dapat menjaga omzet perusahaan yang selama ini menjadi defect senilai Rp6.552.000 per bulan. | |
| dc.description.abstract | The development of the food processing industry has positively impacted manufacturers of basic ingredients like breadcrumbs and bakery products, leading to increased demand. PT LeGitt Boga Mandiri, a producer in this sector, faces efficiency challenges including chaotic and backtracking material flow, potential cross-contamination between lines, and product waste from dropped dough. This research focuses on Value Stream Mapping (VSM) for identifying existing waste, such as chaotic and backtracking material flow, potential cross-contamination between lines, and product waste from dropped dough. Furthermore, this study aims to redesign the production line layout using the Systematic Layout Planning (SLP) method, which is then evaluated through Anylogic simulation and future state Value Stream Mapping (VSM) analysis. The simulated redesign results demonstrate problem resolution with smoother material flow and reduced product waste. This layout improvement also enhances efficiency, evidenced by an average decrease in material travel distance of 20.24% and an average reduction in material transfer time of 26.35%. This increased efficiency directly impacts productivity, with the potential to boost the company's turnover by up to Rp16,656,370 per month. Furthermore, the addition of work equipment to minimize defective product waste could safeguard company revenue that was previously lost to defects, valued at IDR 6.552.000 per month. | |
