| Abstract: | Industri pangan memiliki tanggung jawab besar dalam memastikan produk
memenuhi standar keamanan pangan. Kebersihan peralatan produksi merupakan
faktor penting dalam mencegah kontaminasi mikroba yang akan memengaruhi
keamanan pangan. Penelitian ini bertujuan untuk mengevaluasi pengaruh jenis
larutan pengencer (akuades steril, larutan NaCl 0,85%, dan BPW) serta teknik swab
(kering dan basah) terhadap hasil analisis mikroba pada peralatan produksi di PT
XYZ. Metode penelitian menggunakan desain faktorial 3x2 dengan analisis
deskriptif, ANOVA dua arah, dan uji Tukey HSD. Sampel diambil dari permukaan
alat produksi dengan tiga kali pengulangan. Jenis larutan pengencer yang
direkomendasikan adalah BPW sebagai larutan standar dan NaCl 0,85% sebagai
alternatif. Teknik swab yang direkomendasikan adalah swab basah sebagai metode
utama dan swab kering sebagai alternatif metode pengambilan sampel. The food industry has a big responsibility in ensuring that products meet food safety standards. Cleanliness of production equipment is an important factor in preventing microbial contamination that will affect food safety. This study aims to evaluate the effect of the type of diluent solution (sterile aquadest, 0.85% NaCl solution, and BPW) and swab techniques (dry and wet) on the results of microbial analysis on production equipment at PT XYZ. The research method used a 3x2 factorial design with descriptive analysis, two-way ANOVA, and Tukey HSD test. Samples were taken from the surface of the production equipment with three repetitions. The recommended type of diluent solution is BPW as a standard solution and 0.85% NaCl as an alternative. The recommended swab technique is wet swab as the main method and dry swab as an alternative method of sampling. |
