| Abstract: | Peningkatan konsumsi tepung terigu di Indonesia mendorong perusahaan manufaktur pangan untuk menjaga efisiensi dalam setiap proses produksi guna menghadapi persaingan yang semakin kompetitif. PT XYZ, sebagai produsen tepung terigu, menghadapi tantangan khusus pada lini repacking produk premix 1 kg yang bersifat custom dan padat karya. Aktivitas ini berpengaruh langsung terhadap kecepatan pemenuhan pesanan, ketepatan pengiriman, dan efektivitas kerja. Penelitian ini bertujuan untuk mengidentifikasi aktivitas yang tidak bernilai tambah serta menetapkan waktu baku sebagai acuan dalam penentuan target produksi yang lebih realistis. Metode yang digunakan meliputi metode stopwatch, analisis gerakan dengan peta kerja tangan kiri dan tangan kanan, serta prinsip ekonomi gerakan. Hasil penelitian menunjukkan bahwa proses repacking produk PMT-004 masih terdapat banyak elemen gerakan tidak efisien seperti transport loaded dan hold, serta ketidakseimbangan penggunaan tangan. Waktu baku yang dihitung secara valid menghasilkan target produksi sebesar 113 box/shift, lebih rendah dari target sebelumnya, sehingga diperlukan penyesuaian dan optimalisasi metode kerja agar proses berjalan lebih efektif dan terstandar. The increasing consumption of wheat flour in Indonesia encourages food manufacturing companies to maintain efficiency in every stage of the production process to remain competitive. PT XYZ, as a wheat flour producer, faces specific challenges in the repacking line of 1 kg premix products, which are custom made and labor-intensive. This activity directly affects the speed of order fulfillment, delivery accuracy, and work effectiveness. This study aims to identify non-value added activities and determine standard time as a reference for setting a more realistic production target. The methods used include the stopwatch method, motion analysis using right and left hand work charts, and the principles of motion economy. The results show that the repacking process of PMT-004 still contains many inefficient motion elements, such as transport loaded and hold, as well as imbalanced hand usage. The standard time calculated through valid measurement indicates a production target of 113 boxes per shift, which is lower than the previous target, thereby requiring adjustments and optimization of work methods to ensure a more effective and standardized process. |
