| Abstract: | Salah satu jenis pangan yang dikonsumsi oleh masyarakat Indonesia sebagai penghasil protein adalah protein asal hewani, seperti daging. Ternak domba berperan penting dalam penyediaan protein hewani nasional. Peningkatan konsumsi protein hewani menyebabkan permintaan terhadap daging meningkat, sementara populasi di Indonesia cenderung menurun, dari 17,71 juta ekor pada tahun 2018 menjadi 14,06 juta ekor pada tahun 2022 (BPS 2022). Penurunan populasi domba disebabkan oleh angka mortalitas tinggi pada anak domba, terutama akibat rendahnya produksi susu induk saat kelahiran anak domba kembar. Pemberian susu pengganti (milk replacer) dapat membantu mengatasi permasalahan tersebut. Milk replacer belum umum digunakan oleh para peternak domba di Indonesia karena harga milk replacer komersial mahal dan produk impor. Alasan tersebut yang mendorong para peneliti mencari bahan sumber protein alternatif pada milk replacer yang ketersediaannya melimpah dan harga terjangkau.
Permasalahan penggunaan milk replacer adalah pemilihan sumber protein alternatif pada milk replacer yang ketersediannya melimpah dan harga terjangkau, serta palatabilitas dan kualitas fisik milk replacer alternatif belum mendekati dengan kualitas milk replacer komersial. Bahan yang berpotensi digunakan sebagai sumber protein alternatif adalah pepton ikan kembung. Pepton ikan kembung adalah daging ikan kembung yang dihidrolisis secara enzimatis dan mengandung kadar protein sebesar 79,47% dan lemak kasar 1,19%. Tujuan penelitian ini untuk mengevaluasi kualitas fisik dan palatabilitas milk replacer mengandung pepton ikan kembung terhadap performa dan kesehatan anak domba kelahiran kembar periode pra sapih. Penelitian ini diharapkan dapat mengatasi mortalitas tinggi pada anak domba dan memberikan pengaruh baik terhadap performa dan kesehatan ternak tersebut.
Penelitian ini terdiri atas tiga tahap yakni produksi dan karakterisasi pepton, produksi dan evaluasi kualitas fisik milk replacer dengan lama pengadukan dan sumber protein berbeda, serta aplikasi milk replacer dengan kualitas fisik terbaik pada anak domba. Perlakuan yang dilakukan pada tahap pertama adalah membandingkan pepton komersial dan pepton ikan kembung secara karakteristiknya sedangkan pada tahap kedua dilakukan uji kualitas fisik milk replacer mengandung protein asal pepton ikan kembung dan tepung kuning telur dengan lama pengadukan berbeda. Tahap ketiga pada penelitian ini menggunakan 6 ekor anak domba kelahiran kembar periode pra-sapih dengan 2 perlakuan dan 3 ulangan. Perlakuan yang diberikan yaitu susu induk domba dan milk replacer dengan kelarutan terbaik. Pengamatan yang dilakukan selama pemeliharaan adalah konsumsi nutrien, pertambahan bobot badan harian, feed conversion ratio, dan mortalitas. Data penelitian dianalisis dengan T-test menggunakan independent sample t-test. Nilai signfikan berkisar (p<0,05) hasil nilai signifikan menentukan adanya perbedaan signifikan secara statistik. Pepton ikan kembung efektif digunakan sebagai sumber alternatif protein dan mampu mensubtitusi penggunaan 100% tepung kuning telur pada milk replacer. Kualitas fisik milk replacer yang dihasilkan sama dengan milk replacer komersial. Pemberian milk replacer pada anak domba kelahiran kembar periode pra-sapih berpengaruh positif terhadap palatabilitas dan performa yang diberikan sama dengan performa anak domba yang diberi susu induk One type of food consumed by the Indonesian population as a source of protein is animal based protein, such as meat. Sheep farming plays a crucial role in providing national animal protein. The increase in the consumption of animal protein has led to a rise in demand for meat, while the population of sheep in Indonesia has tended to decline, from 17.71 million head in 2018 to 14.06 million head in 2022 (BPS 2022). This decrease in sheep population is attributed to a high mortality rate among lambs, particularly due to the low milk production of ewes during the birth of twin lambs. The provision of milk replacer can help address this issue. However milk replacer is not commonly used by sheep farmers in Indonesia due to the high cost of commercial milk replacers and their imported nature. This situation has prompted researchers to seek alternative protein sources of milk replacer that are abundant and affordable. The challenges associated with using milk replacer include the selection of alternative protein sources that are readily available and cost effective, as well as the palatability and physical quality of alternative milk replacers not yet approaching that of commercial milk replacers. A potential ingredient for use as an alternative protein source is mackerel peptone. Mackerel peptone is derived from enzymatically hydrolyzed mackerel fish, containging 79.47% protein and 1.19% crude fat. The objective of this research is to evaluate the physical quality and palatability of milk replacer containing mackerel pepton on the performance and health of twin lambs during the pre-weaning period. This study is expected to address the high mortality rate among lambs and positively influence the performance and health of these animals. The research consists of three stages: the production and characterization of peptone, the production and evaluation of the physical quality of milk replacer with different mixing time and protein sources, and the application of the milk replacer with the best physical quality to the lambs. The first stage involves comparing commercial peptone and mackerel peptone based on their characteristics, while the second stage includes testing the physical quality of milk replacers. The third stage is utilizes six twin lambs during the pre-weaning period with two treatments and three replications. The treatments administered include ewe milk and milk replacer with the best solubility. Observations during the maintenance period include nutrient consumption, daily weight gain, feed conversion ration, and mortality. The research data are analyzed using the T-test with independent samples. The significant values range (p<0.05) indicates a statistically significant difference. Mackerel fish peptone is an effective alternative source of protein that can completely replace up to 100% egg yolk powder in milk replacer formulas. The quality of the milk replacer produced is similar to commercial milk replacers. This milk replacer positively influences palatability and provides performance of twin born lambs equivalent to that of lambs fed with mother’s milk. |
