| dc.description.abstract | Chicken noodle soup is a typical Indonesian food containing shredded chicken and other complementary ingredients. Chicken meat is at risk of contamination with antibiotic-resistant Escherichia coli (E. coli), which can reduce the effectiveness of antibiotics in treating disease. This research aimed to identify the antibiotic resistance of E. coli isolated from shredded chicken in chicken soto sold in the canteen of the Dramaga Campus of IPB University, Bogor. A total of 43 isolates identified as E. coli were used for antibiotic resistance testing using the Kirby-Bauer disc diffusion method, referring to the Clinical Laboratory Standards Institute 2023. E. coli isolates showed resistance to all antibiotics, which was 86% (37/43) with percentages of cefotaxime (60,5%), ampicillin (58,1%), sulfamethoxazole-trimethoprim (46,5%), chloramphenicol (37,2%), streptomycin (37,2%), and tetracycline (32,6%). E. coli isolates also showed intermediate-level resistance to streptomycin (48,8%), ampicillin (9,3%), chloramphenicol (9,3%), tetracycline (7%), cefotaxime (7%), and sulfamethoxazole-trimethoprim (4,7%). All bacterial isolates were still sensitive to tetracycline (60,5%), chloramphenicol (53,5%), sulfamethoxazole-trimethoprim (48,8%), ampicillin (32,6%), cefotaxime (32,6%), and streptomycin (14%). E. coli isolates were also multi-drug resistant, with the highest prevalence on 4 types of antibiotics at 30,2%. The presence of antibiotic-resistant E. coli in food can have a negative impact on public health. | |
