Abstract: Sagu memiliki potensi besar dijadikan sebagai pangan alternatif untuk mendukung ketahanan pangan, dengan kandungan karbohidrat sekitar 85%. Tanaman sagu tersebar di berbagai daerah di Indonesia dan masih tumbuh secara alami. Kabupaten Lingga merupakan salah satu daerah yang menjadi area dengan potensi sagu terbesar di Provinsi Kepulauan Riau. Namun, pengolahan sagu di Kabupaten Lingga belum optimal sehingga perlu dilakukan penelitian terkait proses pengolahan. Penelitian bertujuan mengidentifikasi proses pengolahan tual sagu menjadi pati, mengidentifikasi rendemen pati sagu dan mengidentifikasi rancangan pengembangan untuk meningkatkan efisiensi pada agroindustri sagu di Kabupaten Lingga. Metode observasi partisipatif dan wawancara semi terstruktur untuk mengidentifikasi proses pengolahan. Pengukuran bobot tual dilakukan untuk menghitung rendemen pati sagu. Analisis SWOT untuk identifikasi rancangan pengembangan agroindustri. Proses pengolahan pati sagu meliputi pengupasan, pemarutan, pencucian, pengendapan pati, pengovenan, penghalusan dan pengeringan dimana efisiensi tiap tahap memengaruhi hasil akhir. Rendemen pati sagu kotor yang dihasilkan bekisar antara 59,20%-73,11%, rendemen pati sagu bersih dari bahan baku pati sagu kotor berkisar antara 80%-86,96% dan rendemen pati sagu kering sebesar 16,27%-26,34%. Rancangan pengembangan agroindustri sagu Lingga menggunakan menggunakan kekuatan untuk menangkap peluang yang ada.
Sago has great potential as an alternative food to support food security, with a carbohydrate content of around 85%. Sago trees are scattered in various regions in Indonesia and still grow naturally. Lingga Regency is one of the areas with the largest sago potential in Riau Islands Province. However, sago processing in Lingga Regency has not been optimized so it is necessary to conduct research related to the processing process. The research aims to identify the process of processing sago tual into starch, identify the yield of sago starch and identify development designs to improve efficiency in the sago agroindustry in Lingga Regency. Participatory observation and semi-structured interviews were used to identify the processing process. Tual weight measurement was conducted to calculate sago starch yield. SWOT analysis to identify agro-industry development design. The sago starch processing process includes peeling, grating, washing, starch deposition, oven, pulverizing and drying where the efficiency of each stage affects the final result. The yield of gross sago starch produced ranged from 59.20%-73.11%, the yield of net sago starch from gross sago starch raw materials ranged from 80%-86.96% and the yield of dried sago starch was 16.27%-26.34%. Lingga's sago agro-industry development design uses strengths to capture existing opportunities.
