Dibimbing oleh WARAS NURCHOLIS dan SURYA DIANTINA Andaliman atau Zanthoxylum acanthopodium DC adalah tanaman Indonesia dengan sifat antioksidan. Penelitian ini menguji pengaruh berbagai pelarut terhadap kandungan polifenol, flavonoid, dan kapasitas antioksidan pada daun, batang, dan buah. Ekstraksi dilakukan dengan metode maserasi dan sentrifugasi menggunakan kombinasi pelarut aseton, etanol, akuades, dan asam asetat. Hasil menunjukkan bahwa kombinasi pelarut aseton-akuades-asam asetat menghasilkan kadar polifenol tertinggi pada daun (1,0442 ± 0,0462 mg GAE/g BK), batang (0,0652 ± 0,0013 mg GAE/g BK), dan buah (0,289 ± 0,010 mg GAE/g BK), serta flavonoid tertinggi pada daun (30,7083 ± 0,5000 QE/g BK), batang (3,46 ± 0,20 QE/g BK), dan buah (14,22 ± 1,08 QE/g BK). Untuk kapasitas antioksidan, pelarut etanol-asam asetat memberikan nilai tertinggi dengan metode ABTS pada daun (2479,52 ± 56,88 µmol TE/g BK), batang (204,60 ± 7,10 µmol TE/g BK), dan buah (1516,52 ± 48,30 µmol TE/g BK). Andaliman sebagai sumber antioksidan alami yang potensial untuk industri farmasi dan pangan.

Supervised by WARAS NURCHOLIS and SURYA DIANTINA. Zanthoxylum acanthopodium DC or Andaliman is an Indonesian plant with antioxidant properties. This study investigates the effect of various solvents on the polyphenol, flavonoid content, and antioxidant capacity in the leaves, stems, and fruits. Extraction was performed using a combination of maceration and centrifugation with solvent mixtures of acetone, ethanol, distilled water, and acetic acid. The results showed that the acetone-aquades-acetic acid combination yielded the highest polyphenol content in the leaves (1.0442 ± 0.0462 mg GAE/g DW), stems (0.0652 ± 0.0013 mg GAE/g DW), and fruits (0.289 ± 0.010 mg GAE/g DW), as well as the highest flavonoid content in the leaves (30.7083 ± 0.5000 QE/g DW), stems (3.46 ± 0.20 QE/g DW), and fruits (14.22 ± 1.08 QE/g DW). For antioxidant capacity, the ethanol-acetic acid combination achieved the highest values using the ABTS method for leaves (2479.52 ± 56.88 µmol TE/g DW), stems (204.60 ± 7.10 µmol TE/g DW), and fruits (1516.52 ± 48.30 TE/g DW).
