Abstract: Proses produksi daging meltique sangat rentan terhadap kontaminasi silang, baik dari peralatan yang digunakan maupun dari penjamah pangan sehingga memerlukan penanganan yang higienis dan sesuai dengan standar keamanan pangan. Penelitian ini bertujuan mengidentifikasi cemaran mikroorganisme secara umum pada daging sapi meltique yang beredar di Kota Jakarta, Bekasi, dan Tangerang, serta mengidentifikasi kontaminasi bakteri koliform, E. coli, S. aureus, dan Salmonella sp. Penelitian ini menggunakan enam sampel daging sapi meltique bagian tenderloin yang diperoleh dari Kota Jakarta, Bekasi, dan Tangerang. Daging tersebut dilakukan pengujian cemaran mikroorganisme berdasarkan SNI 2897:2008 dan hasil dari pengujian ini dianalisis secara deskriptif serta dibandingkan dengan SNI 3932:2008 tentang mutu karkas dan daging. Hasil dari penelitian ini mengindikasikan bahwa sebagian besar sampel tidak memenuhi standar keamanan pangan terkait cemaran mikroba. Hanya sampel T2 yang memenuhi standar kualitas yang ditetapkan, hal ini mencerminkan kondisi pengolahan yang lebih baik.
The production process of meltique meat is very susceptible to crosscontamination, both from the equipment used and from food handlers, so it requires hygienic handling and in accordance with food safety standards. This study aims to identify microorganism contamination in general in meltique beef circulating in the cities of Jakarta, Bekasi, and Tangerang, as well as identify contamination of coliform bacteria, E. coli, S. aureus, and Salmonella sp. This study used six samples of tenderloin meltique beef obtained from the cities of Jakarta, Bekasi, and Tangerang. The meat was tested for microorganism contamination based on SNI 2897:2008 and the results of this test were analyzed descriptively and compared with SNI 3932:2008 regarding the quality of carcasses and meat. The results of this study indicate that most of the samples do not meet food safety standards related to microbial contamination. Only T2 sample meet the set quality standards, this reflects better processing conditions.
