| dc.description.abstract | Ikan opah (Lampris guttatus) secara alami memiliki kandungan formaldehida yang cukup tinggi sehingga sulit mendeteksi penambahan formaldehida artifisial. Pengujian formaldehida yang ditemukan pada ikan terdiri dari formaldehida alami dan formaldehida artifisial yang ditambahkan. Pembusukan alami yang terjadi pada ikan menyebabkan reduksi enzimatik trimetilamina oksida (TMAO) menghasilkan formaldehida dan dimetilamina (DMA). Tujuan dari penelitian ini untuk mengidentifikasi indikator pembeda asal formaldehida menggunakan beberapa parameter, seperti kemunduran mutu, senyawa metabolit, dan struktur daging pada ikan opah yang disimpan selama 14 hari pada suhu chilling. Penelitian ini menggunakan rancangan acak lengkap faktorial dengan dua perlakuan, yaitu penambahan konsentrasi formaldehida 0%, 2%, dan 4%, serta waktu penyimpanan 14 hari. Total plate count (TPC), pH,total volatile base (TVB), formaldehida (FA), dimetilamina (DMA), warna, tekstur, serta struktur daging merupakan parameter yang diamati pada penelitian ini. Hasil penelitian menunjukkan bahwa total plate count (TPC), kombinasi formaldehida (FA) dengan DMA dan TVB, redness, serta kombinasi TMA, glisin, anserina, dan treonin dapat berfungsi sebagai biomarker pembeda asal formaldehida pada ikan. | - |
| dc.description.abstract | Opah fish (Lampris guttatus) naturally has a high formaldehyde content, making it difficult to detect the addition of artificial formaldehyde. Formaldehyde assays found in fish consist of natural formaldehyde and artificially added formaldehyde. Natural spoilage that occurs in fish causes enzymatic reduction of trimethylamine oxide (TMAO) to produce formaldehyde and dimethylamine (DMA). The aim of this study was to identify differentiating indicators of formaldehyde origin using several parameters, such as quality deterioration, metabolite compounds, and meat structure in opah fish stored for 14 days at chilling temperature. This study used a factorial complete randomized design with two treatments, namely the addition of formaldehyde concentrations of 0%, 2%, and 4%, and a storage time of 14 days. Total plate count (TPC), pH, total volatile base (TVB), formaldehyde (FA), dimethylamine (DMA), color, texture, and meat structure were the parameters observed in this study. The results showed that total plate count (TPC), the combination of formaldehyde (FA) with DMA and TVB, redness, and the combination of TMA, glycine, anserine, and threonine can serve as biomarkers to distinguish the origin of formaldehyde in fish. | - |
