Beetroot (Beta vulgaris) is a plant that high nutritional valueable for health, but the safety of beetroot infusion is still unknown. This study aims to determine the toxicity of beetroot infusion in mice using the lethal dose 50 (LD50) method and determine its impact on the physiological body. A total of 20 adult female mice of the Deutschland Denken Yoken strain were divided into control groups and and 4 groups treatment given beetroot infusion at doses of 5, 10, and 15 g/kg BW orally. Parameters observed were clinical symptoms, physiological responses, body weight, absolute organ weight, relative organ weight, and mortality for 14 days. Based on the results of the study, the LD50 of beetroot infusion was 15.8 g/kg BW. Observations of physiological responses, absolute organ weights, relative organ weights did not show significant differences (p>0.05), but in the high dose group there were significant differences in mice body weight without causing clinical symptoms and changes in organ macroanatomy. Beetroot infusion is included in the category of practically non-toxic, does not cause changes in organ weights, and changes in clinical symptoms such as a decrease in mice body weight are found.
