Abstract: | Peningkatan jumlah penduduk sejalan dengan peningkatan jumlah
kebutuhan akan makanan dan jumlah sampah makanan. Kecamatan Bekasi
Selatan menjadi penyumbang terbesar sampah di Kota Bekasi. Warung tegal
(warteg) salah satu jenis usaha rumah makan yang terletak di Kecamatan Bekasi
Selatan yang turut andil dalam menghasilkan food waste. Maka dari itu, tujuan
dari penelitian ini adalah (1) Mengestimasi jumlah dan nilai kerugian ekonomi dari
timbulan sampah makanan dari warung tegal di Kecamatan Bekasi Selatan. (2)
Menganalisis persepsi dan perilaku konsumen warung tegal terhadap sampah
makanan di Kecamatan Bekasi Selatan. (3) Merumuskan strategi pengurangan
untuk meminimalisir timbulan sampah makanan dari warung tegal di Kecamatan
Bekasi Selatan. Metode yang digunakan dalam penelitian ini adalah metode SNI
19-3964-1994, Modifikasi skala likert, dan Interpretive Structural Modelling.
Hasil penelitian menunjukkan: Total timbulan food waste konsumen di
keseluruhan warung tegal di Kecamatan Bekasi Selatan sebesar 128,8 kilogram
per hari dan 47.013 kilogram per tahun dengan volume sebesar 558,7 liter per hari
dan 203.918 liter per tahun. Nilai kerugian ekonomi dari sampah makanan
konsumen sebesar Rp5.864.309 per hari dan Rp2.140.472.785. Hasil persepsi
konsumen warung tegal terhadap food waste bernilai positif, yaitu konsumen
mengupayakan untuk mengurangi food waste. Sub-elemen kunci dalam strategi
pengurangan food waste adalah mengurangi takaran porsi nasi.
Kata kunci : kerusakan lingkungan, nilai kerugian, pendapatan, peningkatan,
timbulan sampah. The increasing population will be accompanied by an increase in the need for food and the amount of food waste. South Bekasi District is the largest contributor to waste in the City of Bekasi. Warung tegal (warteg) is a type of homestyle restaurant located in South Bekasi District. The objectives of this study are: (1) To estimate the amount and economic value of food waste from wartegs in South Bekasi District. (2) To analyze the perceptions and behaviors of warteg consumers towards food waste in South Bekasi District. (3) To formulate reduction strategies to minimize food waste from wartegs in South Bekasi District. The methods used in this study were the SNI 19-3964-1994 method, Likert scale, and Interpretive Structural Modeling. The results of the study showed: (1) The total food waste from consumers in all wartegs in South Bekasi District was 128,8 kg/day and 47.013 kg/year with a volume of 558,7 l/day and 203.918 l/year. The economic loss was Rp5.864.309/day and Rp2.140.472.785/year. (2) The most significant influence of warteg consumers' perceptions on food waste was that leaving food behind reflects a loss of sensitivity towards those who cannot afford to buy food (attitude), consumers' families consider leftover food to be a source of disease (subjective norms), and consumers can finish their food because the eating place is clean (perceived behavioral).
