| Abstract: | Berdasarkan data statistika pada tahun 2021 peningkatan produksi daging ayam
kampung sebanyak 27.957 ton, pada tahun 2022 meningkat sebanyak 29.855 ton, pada
tahun 2023 meningkat sebanyak 30.213 ton. Tujuan dari penelitian ini adalah antara
lain mengetahui kualitas fisik karkas ayam kampung, mengetahui profil karkas dan
potongan potongan komersial ayam kampung asli dan ayam kampung unggul
balitbangtan , selain itu menganalisis kualitas nutrisi daging ayam kampung asli dan
ayam kampung unggul balitbangtan, susut masak dan residu antibiotik pada ayam
kampung asli dan ayam kampung unggul balitbangtan. Berdasarkan hasil penelitian
pemberian fitobiotik pada air minum ayam kampung asli menunjukkan pengaruh
berbeda nyata terhadap persentase potongan sayap baik jantan dan betina namun tidak
memberikan pengaruh berbeda nyata terhadap ayam kampung unggul balitbangtan.
Kualitas nutrisi daging khusunya protein kasar relatif lebih tinggi dibandingkan
penelitian sebelumnya. Hasil uji laboratorium menunjukkan hasil yang negatif terhadap
daging yang artinya tidak terdeteksi residu antibiotik pada daging ayam kampung asli
dan ayam kampung unggul balitbangtan. Based on statistical data, in 2021, the increase in native chicken meat production was 27,957 tons; in 2022, it increased by 29,855 tons; and in 2023, it increased by 30,213 tons. The aim of this research is to, among other things, determine the physical quality of native chicken carcasses, determine the carcass profile and commercial cuts of kampung asli chicken and kampung unggul balitbangtan chicken, in addition to analyzing the nutritional quality of kampung asli chicken meat and kampung unggul balitbangtan chicken, cooking losses, and antibiotic residues on kampung asli chickens and kampung unggul balitbnagtan chicken. Based on the research results, giving phytobiotics to the drinking water of kampung asli chickens showed a significantly different effect on the percentage of wing clippings for both males and females but did not have a significantly different influence on the kampung unggul balitbangtan chickens. The nutritional quality of meat, especially crude protein, is relatively higher compared to previous research. Laboratory test results showed negative results for the meat, which means that no antibiotic residue was detected in the meat of kampung asli chickens and kampung unggul balitbangtan chickens. |
