| Abstract: | UKM XYZ merupakan UKM di Kota Cirebon yang bergerak dibidang pengolahan produk perikanan. Salah satu produk yang dihasilkan adalah otak-otak ikan. Jika dilihat di lapangan, masih terdapat ketidaksesuaian dalam penerapan GMP yang dapat berpotensi terhadap mutu produk yang dihasilkan. Otak-otak ikan yang dihasilkan telah memiliki sertifikat SNI dan dalam proses surveilans. Pendampingan UKM bertujuan mengevaluasi penerapan GMP dan memberikan rekomendasi tindakan perbaikan serta membantu UKM dalam keberlanjutan proses sertifikasi SNI produk otak-otak ikan. Metode yang digunakan adalah analisis kesenjangan penerapan GMP, tindakan perbaikan penerapan GMP, dan pengujian mutu otak-otak ikan di laboratorium. Penerapan GMP oleh UKM XYZ sebelum perbaikan mendapatkan status peringkat C (cukup) dengan temuan penyimpangan 3 serius. Setelah dilakukan perbaikan terdapat peningkatan dalam peneran GMP dan status peringkat berubah menjadi A (baik sekali) dengan temuan penyimpangan 3 mayor dan 2 minor. Sertifikat SNI otak-otak ikan tetap dipertahankan karena mutu otak-otak ikan telah memenuhi SNI setelah dilakukannya perbaikan. SMEs XYZ is an SMEs in Cirebon City engaged in processing fishery products. One of the products produced is fish brains. When viewed in the field, there are still discrepancies in the application of GMP which can potentially affect the quality of the products produced. The fish brains produced already have SNI certificates and are in the process of surveillance. SMEs assistance aims to evaluate the implementation of GMP and provide recommendations for corrective actions and assist SMEs in the sustainability of the SNI certification process for fish brain products. The methods used are gap analysis of GMP implementation, corrective actions for GMP implementation, and quality testing of fish brains in the laboratory. The implementation of GMP by XYZ SMEs before the improvement gained C rating status (sufficient) with findings of 3 serious deviations. After improvement, there was an increase in GMP suppression and the rating status changed to A (very good) with findings of 3 major and 2 minor deviations. The SNI certificate of fish brains is maintained because the quality of fish brains has met SNI after improvements. |
