Abstract: Penelitian ini berfokus pada peningkatan kualitas dan konsistensi produksi mie pada Usaha Kecil dan Menengah (UKM) melalui pengembangan mesin pencetak dan pemotong mie otomatis. Metode produksi mie tradisional yang masih dominan di UKM seringkali menghasilkan produk yang tidak seragam, berpotensi terkontaminasi, dan memiliki waktu produksi yang relatif lama. Penelitian ini bertujuan untuk mengatasi permasalahan tersebut dengan merancang sebuah mesin otomatis yang mampu meningkatkan keseragaman produk, mengurangi risiko kontaminasi, serta mempercepat proses produksi. Metode penelitian yang digunakan meliputi wawancara, observasi, dan studi literatur. Hasil penelitian menunjukkan bahwa mesin otomatis yang dikembangkan mampu menghasilkan mie dengan kualitas yang lebih baik dan lebih konsisten dibandingkan dengan metode tradisional. Mesin ini juga mampu mengurangi ketergantungan pada tenaga kerja manusia, serta mengoptimalkan penggunaan energi melalui penggunaan motor listrik. Integrasi teknologi konveyor dan pemotongan adonan mie pada mesin ini memungkinkan variasi tekstur mie dan meningkatkan kebersihan produk. Dengan demikian, penelitian ini memberikan kontribusi signifikan dalam meningkatkan kualitas dan standar sanitasi produksi mie pada skala UKM.
This research focuses on improving the quality and consistency of noodle production in Small and Medium Enterprises (SMEs) through the development of an automated noodle extruder and cutter machine. Traditional noodle production methods, which remain predominant in SMEs, often result in inconsistent products, potential contamination, and relatively long production times. This study aims to address these issues by designing an automated machine that enhances product consistency, reduces contamination risks, and speeds up the production process. The research methods used include interviews, observations, and literature reviews. The results indicate that the developed automated machine produces noodles with better and more consistent quality compared to traditional methods. Additionally, the machine reduces reliance on manual labor and optimizes energy use through an electric motor. The integration of conveyor technology and noodle dough cutting in this machine allows for variations in noodle texture and improves product cleanliness. Thus, this research makes a significant contribution to enhancing the quality and sanitation standards of noodle production at the SME level.
