Abstract: Indonesia memiliki unggas endemik burung puyuh yang memiliki daging dan telur yang bergizi cukup lengkap dibandingkan sumber lainnya. Kesehatan dan kesejahteraan masyarakat harus diperhatikan demi mendapatkan bonus demograsi di tahun 2045. Kehidupan bayi sejak dalam kandungan hingga 1000 hari pertama menjadi masa krusial dalam mencapai tumbuh kembang optimal. Pada masa ini pemenuhan kebutuhan energi dan gizi penting didukung dari makanan pendamping ASI. Unggas puyuh dipilih menjadi basis bahan penelitian formulasi MPASI instan ini dengan mempertimbangkan aspek nutrisi yang penting untuk pertumbuhan dan perkembangan bayi. Penelitian ini menggunakan variasi bahan tambahan seperti kacang-kacangan, beras, singkong, wortel, bayam, jamur kancing, dan minyak sawit merah. Berdasarkan hasil uji sifat fisik, kimia, dan organoleptik didapatkan formulasi terbaik F1 yakni dengan penambahan kacang kedelai. Formulasi ini menunjukan memenuhi standar SNI untuk kadar air, protein, dan lemak. Dalam 25 gram sajian menunjukkan hasil terbaik dengan menyumbang protein sebesar 37% ALG dan energi 107,14 kkal. Produk ini telah memperoleh klaim pangan tinggi protein, serat pangan, dan zat besi, serta kaya vitamin dan mineral.
Indonesia has endemic poultry birds that have meat and eggs that are quite nutritious compared to other sources. People's health and well-being must be taken care of in order to get a demographic bonus in 2045. The life of the baby from the womb to the first 1000 days is a crucial period in achieving optimal growth. At this time, the fulfilment of vital energy and nutritional needs is supported by the milksupported food. Pumpkin grain is chosen as the basis for the research material of this instant MPASI formulation, considering the nutritional aspects that are important for the growth and development of the baby. The study used variations of additives such as nuts, rice, strawberries, carrots, spinach, pineapple mushrooms, and red palm oil. Based on the results of physical, chemical, and organoleptic tests, the best formulation of F1 was obtained with the addition of soybeans. The formulation demonstrates that it meets SNI standards for water, protein, and fat content. In 25 grams of meal showed best results by contributing 37% protein of ALG and 107.14 kcal energy. This product has acquired food claims high in protein, fiber, and iron, as well as rich in vitamins and minerals.
