Abstract: Pangan olahan tertentu yang diproduksi oleh IRTP wajib memiliki izin edar PIRT untuk memastikan pangan yang dihasilkan memenuhi standar keamanan pangan. UMKM Entabehkel merupakan industri kecil yang belum memiliki basis pengetahuan tentang penerapan CPPB-IRT dan SSOP sebagai persyaratan dasar dari sistem keamanan pangan dan perolehan izin edar PIRT. Penelitian ini bertujuan untuk mengevaluasi penerapan CPPB-IRT dan SSOP dengan melakukan analisis kesenjangan antara kondisi rumah produksi dengan kondisi seharusnya menggunakan form checklist penilaian CPPB-IRT dan SSOP, memberikan rekomendasi perbaikan dan pengajuan izin edar PIRT. Hasil evaluasi penerapan CPPB-IRT sebelum perbaikan presentase pemenuhannya hanya mencapai 54.05%, setelah dilakukan perbaikan sudah mencapai 100% sehingga UMKM Entabehkel berhasil mendapatkan izin edar PIRT. Sementara, untuk penerapan SSOP persen penyimpangan menurun dari 60% menjadi 12% yang sudah termasuk ke dalam kategori cukup memenuhi penerapan SSOP.
Certain processed foods produced by household-scale food industries must have a PIRT distribution permit to ensure food meets food safety standards. UMKM Entabehkel, a small-scale industry, needs a knowledge base on implementing good manufacturing practices and Sanitation Standard Operating Procedures (SSOP), which are fundamental requirements of food safety systems. This study aims to evaluate the implementation of CPPB-IRT and SSOP by conducting a gap analysis between the actual conditions of the production house and the expected conditions using an assessment checklist form, providing improvement recommendations, and applying for the PIRT distribution permit. The evaluation results showed that the implementation of CPPB-IRT before improvements had a fulfillment percentage of only 54.05%. Still, after the upgrades, it reached 100%, allowing UMKM Entabehkel to obtain the PIRT distribution permit successfully. Meanwhile, the percentage of non-compliance in SSOP implementation decreased from 60% to 12%, falling into the category of reasonably compliant with SSOP implementation. Recommendations for improvements were provided for the aspects of SSOP that still needed to be fulfilled.
