Abstract: Sanitasi dan higienitas merupakan hal yang penting untuk menjaga mutu produk yang diturunkan di Pelabuhan Perikanan Nusantara (PPN) Kejawanan. Tingkat higienitas dan sanitasi di PPN Kejawanan belum diketahui dan penanganan pada proses bongkar hasil tangkapan belum memenuhi standar CPIB. Penelitian ini bertujuan untuk mengindentifikasi aktivitas bongkar hasil tangkapan ikan dari kapal sampai diangkut ke mobil pengangkut dan mengindentifikasi kondisi sanitasi dan higienitas pada aktivitas bongkar hasil tangkapan ikan. Metode yang digunakan dalam penelitian ini berupa observasi langsung, wawancara nakhoda dengan teknik purposive sampling, dan uji organoleptik dan uji formalin dan dianalisis dengan analisis deskriptif. Hasil penelitian menunjukkan bahwa terdapat beberapa aktivitas di proses pembongkaran ikan yang terdiri dari proses persiapan bongkar, proses bongkar, dan pasca bongkar. Kondisi sanitasi dan higienitas pada proses bongkar di PPN Kejawanan dinilai masih kurang.
Sanitation and hygiene are important to maintain the quality of products unloaded at the Kejawanan Fisheries Port (PPN). The level of hygiene and sanitation at PPN Kejawanan is not yet known and the handling of the catch unloading process doesn’t match with CPIB standards. This research aimed to identify the activities of unloading the catch from the ship until it was transported to the transport vehicle and to identify the sanitation and hygiene conditions in the activity of unloading the catch. The methods used in this research were direct observation, interviews with the captain using purposive sampling techniques, organoleptic and formalin tests. Descriptive analysis was used for the collected data. The results showed that there were several activities in the fish unloading process consisting of the unloading preparation process, unloading process, and post-unloading. Sanitation and hygiene conditions during the unloading process at PPN Kejawanan were considered to be inadequate.
