Abstract: Salah satu hasil samping pertanian yang dapat dijadikan alternatif hijauan untuk pakan ternak yaitu hasil samping kangkung biji atau dikenal dengan kangkung kering (Ipomoea reptans Poir.). Penelitian bertujuan menganalisis kualitas fisik dan akseptabilitas wafer kangkung kering pada ternak kambing dengan lama pemanasan dan ketebalan berbeda. Peubah yang diukur yaitu kadar air, aktivitas air, wafer durability indeks, pola tingkah laku dan waktu makan, serta akseptabilitas. Percobaan menggunakan rancangan acak lengkap (RAL) faktorial dengan faktor 1 yaitu lama pemanasan 3, 5, dan 7 menit dan faktor 2 yaitu ketebalan 2 dan 3 cm dengan 3 ulangan. Data kualitas fisik dan akseptabilitas wafer terhadap ternak kambing dianalisis menggunakan analisis varian (ANOVA) dan uji jarak berganda Duncan. Wafer dengan kualitas fisik dan akseptabilitas terbaik dilakukan uji pola tingkah laku dan waktu makan serta akseptabilitas dengan perlakuan kangkung kering (P0) dan wafer kangkung kering (P1) menggunakan analisis t-test. Kualitas fisik wafer kangkung kering lama pemanasan 3, 5, 7 menit dan ketebalan 2 dan 3 cm telah memenuhi standar KA, Aw, dan WDI. Nilai akseptabilitas wafer kangkung kering dapat diterima sebanyak 99% oleh ternak kambing. Pakan berupa kangkung kering dalam bentuk wafer memiliki akseptabilitas lebih tinggi dibandingkan tidak dibuat wafer.
One of the Agricultural by products that could be used as an alternative forage for animal feed is kale seeds or known as dried kale (Ipomoea reptans Poir.). This study aimed to analyze the physical quality and acceptability of dried kale wafers in goats with different heating duration and thickness. The variables measured were moisture content, water activity, wafer durability index, behavior pattern and eating time, and acceptability. The experiment used a factorial complete randomized design (CRD) with factor 1 being heating duration of 3, 5, and 7 minutes and factor 2 being thickness of 2 and 3 cm with 3 replications. Data on physical quality and acceptability of wafers to goats were analyzed using analysis of variance (ANOVA) and Duncan's multiple range test. Wafers with the best physical quality and acceptability were tested for behavioral patterns and eating time as well as acceptability with dried kale treatment (P0) and dried kale wafers (P1) using t-test analysis. The physical quality of dried kale wafers with heating duration of 3, 5, 7 minutes and thickness of 2 and 3 cm had met the standards of KA, Aw, and WDI. Acceptability value of dried kale wafers could be accepted as much as 99% by goats. Feed in dried kale in the form of wafers had higher acceptability than not made wafers.
