Abstract: | Obesitas berhubungan dengan penumpukan lemak di dalam tubuh disimpan
dalam bentuk trigliserida. Obesitas dapat dicegah dengan menginhibisi enzim
lipase menggunakan senyawa yang berasal dari golongan flavonoid dan fenolik.
Kulit buah nangka diketahui memiliki kandungan total fenolik empat kali lebih
banyak dibandingkan dengan bagian biji dan daging buah. Oleh karena itu,
potensi ekstrak kulit buah nangka sebagai inhibitor lipase perlu dikaji lebih lanjut.
Penelitian ini bertujuan menentukan kadar total fenolik, kadar total flavonoid,
serta daya inhibisi lipase pankreas oleh ekstrak kulit buah nangka dewasa dan
muda secara in vitro. Metode yang digunakan pada penelitian ini yaitu ekstraksi,
analisis total fenolik dan flavonoid, serta uji inhibisi lipase. Hasil penelitian
menunjukkan bahwa kulit buah nangka muda memiliki total fenolik dan flavonoid
serta persen inhibisi lipase yang lebih tinggi dibandinkan kulit buah nangka
dewasa, yaitu berturut-turut sebesar 242,50 ± 5,20 mg EAG/g bobot kering, 19,59
± 0,09 mg EK/g bobot kering, dan 47,81 ± 1,79%. Berdasarkan penelitian yang
telah dilakukan, kulit buah nangka muda lebih potensial sebagai kandidat inhibitor
lipase pankreas. Obesity is related to the accumulation of fat in the body stored as triglycerides. Obesity can be prevented by inhibiting the lipase enzyme using the compounds from the phenolic and flavonoid groups. Jackfruit peel extract known to have total phenolic and flavonoid four times higher than the seed and pulp part. Therefore, the potential of jackfruit peel extract as pancreatic lipase inhibitor sould be studied further. This research aimed to determine the total phenolic, total flavonoid, and pancreatic lipase inhibition by young and mature jackfruit peel extract in vitro. The methods that has been used in this research are extraction, total phenolic content determination, total flavonoid content determination, and pancreatic lipase inhibition. The result of this research shows that young jackfruit peel extract has higher total phenolic content, total flavonoid content, and pancreatic lipase inhibition than mature jackfruit peel extract with the value of 242,50 ± 5,20 mg GAE/g dry weight, 19,59 ± 0,09 mg QE/g dry weight, and 47,81 ± 1,79% respectively. Based on the research that has been conducted, young jackfruit peel has more potential as pancreatic lipase inhibitor than mature jackfruit peel. |
