| Abstract: | Korporasi Petani Kecamatan Modoinding di Kabupaten Minahasa Selatan
merupakan sekian dari komunitas petani yang memiliki aspirasi untuk mampu
mengolah komoditas kentang yang dikultivasi secara mandiri menjadi produk
dengan nilai tambah, baik akibat permasalahan dari komoditas itu sendiri maupun
dalam harapan untuk mempertahankan keberlanjutan pertanian. Namun hingga kini
Korporasi Petani belum memiliki gambaran yang jelas mengenai gambaran produk
kentang yang dapat diproduksi secara industri, maupun tahapan proses yang mampu
dijalankan. Di bawah naungan program Kementrian Pertanian Republik Indonesia
berupa UPLAND, dijalankan inisiasi untuk menentukan produk turunan kentang
terbaik berdasarkan orientasi ekonomi tersebut berupa mashed potato. Penelitian
ini dilakukan untuk mengembangkan konsep mashed potato sebagai konsep
berdasarkan berbagai modifikasi produk itu sendiri. Penelitian mendapatkan
perumusan produk terbaik berdasarkan uji organoleptik dan penyesuaian dengan
Standar Nasional Indonesia (SNI). Penelitian juga melakukan analisis dalam tiap
tahapan proses pembuatan produk tersebut, yang secara kualitatif dan kuantitatif
akan diterapkan dalam kapasitas produksi berdasarkan kapabilitas alat dan sumber
daya yang tersedia. Pengembangan produk dan lini produksi ini kemudian akan
dianalisis secara kelayakan finansial dalam penelitian terkait sebagai tahapan
validasi secara ekonomis dalam kemampuan menyejahterakan Korporasi Petani
Modoinding secara finansial berdasarkan orientasi program UPLAND. Modoinding Farmers Corporation are few of local farming community which aspires to transform their self cultivated potatoes as a commodity into a product with added value, whether due to the problem caused by the commodity or the desire to sustain the capability of farming itself. But until now, the corporation still yet to attain any form of which potato product could be produced with best economic advantage and the various step to process it industrially. Under the supervision of Indonesian Ministry of Agriculture, the UPLAND program is created to initiate the necessity of choosing the best potato-based product based on economic standpoint as mashed potato. This research was conducted to develop the conception of mashed potato as a concept into a product by various modification of its process. This research gathers the best product formulation by organoleptic comparison and referring national standarisation (SNI). This research also initiate analysis from each step of production process, evaluated by quantitative and qualitative means based on available resource and mechanical capability. Both product and its production line will then be analysed by financial visibility with correlated research as validation step by economic means to ensure industry’s ability to prosper financially as UPLAND’s orientation. |
