Abstract: Pisang merupakan buah yang paling banyak diproduksi di Indonesia. Buah pisang termasuk buah klimakterik yang terus mengalami proses pematangan setelah dipanen. Kemampuan mengidentifikasi kematangan buah yang tepat diperlukan untuk mendapatkan hasil panen lebih optimal. Metode terukur untuk menentukan kriteria kematangan pisang adalah menggunakan akumulasi satuan panas. Penelitian ini bertujuan memantapkan akumulasi satuan panas 1260 oC hari setelah antesis sebagai kriteria panen terukur pisang Tanduk serta melihat pengaruhnya terhadap kualitas fisik dan kimia buah. Penelitian dilaksanakan di Kebun Percobaan Sukamantri IPB, Bogor, Jawa Barat pada bulan Januari hingga Mei 2023 dan di Laboratorium Pascapanen, Departemen Agronomi dan Hortikultura pada bulan April hingga Mei 2023. Rancangan percobaan menggunakan Rancangan Acak Lengkap dengan faktor tunggal, yaitu waktu antesis yang terdiri atas lima perlakuan. Hasil penelitian menunjukkan bahwa beda waktu antesis pisang Tanduk namun dipanen pada akumulasi satuan panas yang sama 1260 oC hari setelah antesis mampu menghasilkan kualitas buah yang seragam.
Bananas are the most produced fruit in Indonesia. Bananas are a climacteric fruit that continues to undergo a ripening process after being harvested. The ability to identify the right fruit ripeness is needed to get more optimal yields. The measurable method for determining banana ripeness criteria is to use accumulated heat units. This study aims to establish the accumulation of heat units at 1260 oC days after anthesis as a measurable harvest criterion for Tanduk bananas and its effect on the physical and chemical qualities of the fruit. The research was conducted at the Sukamantri Experimental Garden of IPB, Bogor, West Java from January to May 2023 and at the Postharvest Laboratory, Department of Agronomy and Horticulture from April to May 2023. The experimental design used was a Completely Randomized Design with a single factor, namely anthesis time which consisted of five treatments. The results showed that different times of anthesis on Tanduk banana but harvested at the same heat unit accumulation of 1260 oC days after anthesis was able to produce uniform fruit quality.
