Abstract: Enzim dapat meningkatkan daya cerna pakan dan fungsi pakan. Belum adanya penelitian mengenai kualitas fisik dan kelarutan total onggok dengan hidrolisis karbohidrase. Tujuan penelitian ini mengevaluasi kelarutan total dan sifat fisik onggok hidrolisis karbohidrase yang dibandingkan dengan dengan onggok. Perlakuan yang digunakan pada penelitian ini adalah P0 =onggok tanpa hidrolisis karbohidrase dan P1 = onggok yang dihidrolisis karbohidrase. Parameter yang diamati adalah berat jenis, ukuran partikel, kerapatan tumpukan, kerapatan pemadatan tumpukan, sudut tumpukan, dan kelarutan total. Data yang diperoleh dianalisis dengan menggunakan independent sample T-Test perangkat lunak SPSS. Hasil menunjukkan bahwa hidrolisis karbohidrase pada onggok memiliki perbedaan yang sangat nyata (P<0,01) pada berat jenis, ukuran partikel, kerapatan tumpukan, kerapatan pemadatan tumpukan, sudut tumpukan, dan kelarutan total. Berat jenis onggok tanpa hidrolisis karbohidrase 1238±269 kg m-3, dengan hidrolisis karbohidrase 864±133 kg m-3. Ukuran partikel onggok tanpa hidrolisis karbohidrase 4,79±0,024 mm, dengan hidrolisis karbohidrase 3,85±0,023 mm. Kerapatan tumpukan onggok tanpa hidrolisis karbohidrase 198±12 kg m-3, dengan hidrolisis karbohidrase 177±8 kg m-3. Kerapatan pemadatan tumpukan onggok tanpa hidrolisis karbohidrase 276±7 kg m-3, dengan hidrolisis karbohidrase 252±156 kg m-3. Sudut tumpukan onggok tanpa hidrolisis karbohidrase 32,265±0,597º, dengan hidrolisis karbohidrase 37,288±0,911º. kelarutan total onggok tanpa hidrolisis karbohidrase 39,794±0,768%, dengan hidrolisis karbohidrase 59,751±0,769%. Simpulan berat jenis, ukuran partikel, kerapatan tumpukan, kerapatan pemadatan tumpukan, kelarutan total onggok tanpa hidrolisis karbohidrase lebih tinggi dibandingkan dengan onggok yang dihidrolisis karbohidrase, sedangkan sudut tumpukan lebih rendah jika dibandingkan dengan onggok yang dihidrolisis karbohidrase.
Enzymes can improve the digestive power and feed function. There has been no research conducted on the physical quality and total solubility of cassava pulp hydrolysis by carbohydrase enzyme .The purpose of this study is to evaluate the total solubility and physical quality of enzyme hydrolysis compared to that of cassava pulp. The treatments used in this study were P0 = cassava pulp and P1 = carbohydrases hydrolyzed cassava pulp. The parameters observed were total solubility and physical quality, which include density, particle size, bulk density, compacted bulk density, angle of repose. The data obtained were analyzed using the independent sample T-Test software SPSS. The results show that the hydrolysis of carbohydrases to cassava pulp has a noticeable difference in effect (P<0,01). The bulk density without hydrolysis of carbohydrases was 1238±269 kg m-3, whereas with hydrolysis of carbohydrases it was 864±133 kg m-3. The particle size without hydrolysis of carbohydrases was 4.79±0.024 mm, and with hydrolysis of carbohydrases it was 3.85±0.023 mm. The true density without the hydrolysis of carbohydrases was 198±12 kg m-3, while the true density with hydrolysis of carbohydrases was 177±8 kg m-3. The tapped density without hydrolysis of carbohydrases was 276±7 kg m-3, whereas with hydrolysis of carbohydrases it was 252±156 kg m-3.The angle of repose without hydrolysis of carbohydrases was 32.265±0.597º, and with hydrolysis of carbohydrases it was 37.288±0.911º. The total solubility without hydrolysis of carbohydrases was 39.794±0.768%, and with hydrolysis of carbohydrases it was 59.751±0.769%. In conclusion, the hydrolysis of carbohydrases results in lower true density, tapped density, bulk density, particle size, and greater angle of repose, and total solubility than cassava pulp.
