Abstract: Evaluasi kandungan total antioksidan dalam suatu sampel dapat dilakukan melalui reaksi oksidasi-reduksi senyawa polifenol sebagai penyusun utama struktur antioksidan dengan menggunakan biosensor. Studi literatur ini bertujuan mempelajari kinerja enzim tirosinase dan lakase sebagai bioreseptor serta mempelajari kinerja biosensor pendeteksi antioksidan berbasis monoenzim dan multienzim. Berbagai teknik imobilisasi enzim seperti adsorpsi, pemerangkapan, ikatan silang, dan ikatan kovalen dapat digunakan untuk meningkatkan kinerja biosensor. Keberhasilan imobilisasi enzim pada permukaan elektrode termodifikasi ditunjukkan pada karakterisasi melalui mikroskopi payaran elektron, dan voltammetri siklik. Contoh aplikasi biosensor sebagai pendeteksi antioksidan antara lain deteksi fenol, asam klorogenat, asam kafeat, katekol, hidrokuinon, dan asam rosmarinat
Evaluation of the total antioxidant content in a sample can be done through an oxidation-reduction reaction of polyphenolic compounds as the main constituent of antioxidant structures using biosensors. This literature study aims to study the performance of tyrosinase and laccase enzymes as bioreceptors and to study the performance of monoenzyme and multienzyme-based antioxidant detection biosensors. Various enzyme immobilization techniques such as adsorption, trapping, cross-linking, and covalent bonding can be used to improve the performance of the biosensor. The success of enzyme immobilization on the surface of the modified electrode was demonstrated by characterization by scanning electron microscopyand cyclic voltammetry.
