Abstract: Kinerja rantai pasok salak saat ini masih memiliki hambatan untuk orientasi ekspor. Tujuan penelitian ini adalah mengetahui mekanisme rantai pasok agroindustri salak orientasi ekspor, mengukur kinerja rantai pasok salak, dan perumusan alternatif strategi untuk meningkatkan kinerja ekspor. Mekanisme rantai pasok agroindustri salak diidentifikasi dengan metode kualitatif. Penelitian ini dilakukan dengan metode SCOR untuk mengetahui kinerja rantai pasok salak orientasi ekspor dan metode analytical network process (ANP) untuk pemilihan alternatif strategi peningkatan kinerja rantai pasok. Hasil pengukuran kinerja rantai pasok menunjukkan matriks reliabilitas telah mencapai 100%, matriks fleksibilitas dan responsivitas selama 2 hari, tidak terdapat penyimpanan salak, dan matriks biaya rantai pasok adalah 37,22%. Hal tersebut menunjukkan bahwa kinerja rantai pasok agroindustri salak orientasi ekspor cukup baik, hanya biaya rantai pasok yang masih tinggi. Biaya tinggi disebabkan hambatan ekspor berupa kualitas salak yang memiliki umur simpan yang pendek sehingga distribusi menggunakan pesawat yang memiliki biaya tinggi dibandingkan dengan kapal. Strategi peningkatan kinerja terpilih yaitu peningkatan kualitas yang dapat dilakukan dengan pembimbingan budidaya hingga panen buah salak oleh pemerintah dan perusahaan, serta peningkatan teknologi pasca panen buah salak. Biaya yang tinggi dapat diatasi dengan peningkatan teknologi pasca panen sehingga salak memiliki umur simpan yang lebih lama, serta biaya distribusi ekspor lebih rendah.
The current performance of the snake fruit supply chain still have obstacles that occur for export orientation. The purpose of this study was to determine the supply chain mechanism of export-oriented snake fruit agroindustry, measurement of snake fruit supply chain performance, and formulate alternative strategies to improve export performance. The supply chain mechanism for snake fruit agroindustry was identified by qualitative methods. This research was conducted using the SCOR method to determine the performance of the export- oriented snake fruit supply chain and the analytical network process (ANP) method for selecting alternative strategies to improve supply chain performance. The results of the supply chain performance measurement show that the reliability performance matrix has reached 100%, the flexibility and responsiveness performance matrix for 2 days, and 37,22% supply chain costs. This shows that the performance of the export-oriented snake fruit agro- industry supply chain is quite good, only the supply chain costs are still high. Supply chain costs are still high due to export barriers in the form of snake fruit quality having a short shelf life so that distribution use airplane which have high costs compared to ships. The selected performance improvement strategy is quality improvement that can be done by guiding the cultivation to harvesting snake fruit by the government and companies, as well as improving post-harvest technology for snake fruit. High costs can be overcome by improving post- harvest technology so that snake fruit have a longer shelf life and lower export distribution costs.
