dc.description.abstractIndustri ayam broiler memiliki potensi besar dan berkembang pesat di Indonesia dalam pemenuhan kebutuhan protein nasional. Namun demikian, baik pemasok, industri pemasok maupun distributor masih menghadapi berbagai permasalahan terkait risiko sepanjang rantai pasok yang berdampak terhadap kerugian dalam aspek ekonomi, sosial, dan lingkungan. Penelitian ini dilakukan secara terintegrasi untuk menganalisis kondisi situasional rantai pasok, mengidentifikasi risiko dan menentukan mitigasi untuk penanganannya. Analisis situasional dilakukan dengan pendekatan Food Supply Chain Network (FSCN) yang dikembangkan oleh Van der Vorst. Dari analisis diketahui struktur jaringan, proses bisnis, sumberdaya, dan manajemen pada rantai pasok ayam broiler. Analisis risiko dilakukan dengan metode HOR (House of Risk) dilakukan pada tiga titik yaitu farm, RPHU, dan retail. Pada masing-masing titik teridentifikasi 16, 19, 15 risk event dan 12, 13, 11 risk agent. Delapan risk agent pada farm dan tujuh pada RPHU dan retail ditetapkan sebagai prioritas untuk diberikan aksi mitigasi. Terdapat 8 aksi mitigasi pada farm dan retail, serta tujuh pada tingkat RPHU yang bisa diterapkan dengan tiga aksi prioritas pada masing-masing tingkat. Menurut pakar, aksi yang harus diutamakan adalah melakukan pelatihan tenaga kerja secara berkala, melakukan maintenance secara berkala, serta meningkatkan kerja sama dan koordinasi antar stakeholder rantai pasok.id
dc.description.abstractThe broiler industry has great potential and is growing rapidly in Indonesia in meeting the national protein needs. However, both suppliers, suppliers and distributors still face various related problems along the supply chain that have an impact on losses in economic, social and environmental aspects. This research was conducted in an integrated manner to analyze supply chain situational conditions, identify risks and determine mitigation for their handling. The situation analysis was carried out using the Food Supply Chain Network (FSCN) approach developed by Van der Vorst. From the analysis, it is known that the network structure, business processes, resources, and management of the broiler supply chain. Risk analysis is carried out using the HOR (House of Risk) method at three points, namely farm, RPHU, and retail. At each of the risk points 16, 19, 15 and 12, 13, 11 risk agents. Eight risk agents on farms and seven on RPHU and retail are set as priorities for mitigation actions. There are 8 mitigation actions at farm and retail, and seven at the RPHU level that can be implemented with three priority actions at each level. According to the expert, the actions that must be taken are conducting regular workforce training, carrying out periodic maintenance, and increasing cooperation and coordination among supply chain stakeholders.id
