Abstract: Unit Pengolahan Ikan (UPI) Mina Bahari 45 merupakan factory sharing pengalengan multiproduk yang mempunyai orientasi ekspor untuk produk olahan ikan dalam kaleng. Salah satu persyaratan produk olahan perikanan agar dapat diekspor adalah adanya sertifikat HACCP. Penelitian ini betujuan mengembangkan sistem HACCP untuk memenuhi jaminan mutu dan kemanan hasil perikanan produk lele dan tuna kaleng di UPI Mina Bahari 45. Sistem HACCP yang telah dikembangkan kemudian diterapkan sebagai syarat pemenuhan mendapatkan sertifikat HACCP. Pemenuhan sistem jaminan mutu dan keamanan pangan hasil perikanan didasarkan pada Peraturan Menteri Kelautan dan Perikanan No. 10 Tahun 2021 tentang Standar Kegiatan Usaha dan Produk pada Penyelenggaraan Perizinan Berusaha Berbasis Risiko Sektor Kelautan dan Perikanan serta sesuai dengan panduan SNI CAC/RCP 1:2011 tentang Rekomendasi Nasional Kode PraktisPrinsip Umum Higiene Pangan. Penerapan sistem HACCP dituangkan dalam Dokumen Manual dan BPMN Penerapan HACCP yang kemudian divalidasi langsung oleh BKIPM KKP RI melalui inspeksi dan diperoleh temuan ketidaksesuaian yang terdiri dari 3 temuan serius, 9 temuan mayor, dan 2 temuan minor. UPI Mina Bahari 45 berhasil mendapatkan sertifikat HACCP dengan grade C yang dapat digunakan sebagai persyaratan ekspor.
UPI Mina Bahari 45 is a multi-product canning factory sharing that has an export orientation for processed fish products in cans. One of the requirements for processed fishery products to be able to export is the existence of a HACCP certificate. This study aims to develop a HACCP system to meet the quality assurance and safety of canned catfish and tuna fishery products at UPI Mina Bahari 45. The HACCP system that has been developed is then applied as a requirement for obtaining a HACCP certificate. Fulfillment of the quality assurance system and food safety of fishery products is based on the Regulation of the Minister of Marine Affairs and Fisheries No. 10 of 2021 concerning Standards for Business Activities and Products in the Implementation of Risk-Based Business Licensing in the Marine and Fisheries Sector and in accordance with the guidelines of SNI CAC/RCP 1:2011 concerning the National Recommendation Code of PracticeGeneral Principles of Food Hygiene. The implementation of the HACCP system is ii stated in the HACCP Manual Documents and BPMN and then directly validated by BKIPM KKP RI through inspection and found non-conformance findings consisting of 3 serious findings, 9 major findings, and 2 minor findings. UPI Mina Bahari 45 has succeeded in obtaining a HACCP certificate with grade C which can be used as an export requirement.
