Abstract: Ikan kerapu merupakan salah satu komoditas perikanan tangkap yang memiliki potensi besar di pasar nasional dan internasional. Melihat potensi tersebut peneliti berkeinginan melakukan pendirian industri pengolahan filet ikan kerapu sehingga perlu dilakukan analisis kelayakan usaha. Penelitian ini bertujuan untuk mengetahui kelayakan pendirian industri pengolahan ikan kerapu di Pulau Jawa yang ditinjau dari aspek teknis dan teknologi. Analisis meliputi penentuan lokasi industry, teknologi proses produksi dan pemilihan mesin dan alat produksi. Hasil dari penelitian dapat diambil kesimpulan bahwa industri pengolahan ikan kerapu layak untuk dijalankan dilihat dari hasil analisis terhadap aspek teknis dan teknologi, Hasil analisis menunjukkan lokasi kabupaten banyuwangi sebagai lokasi paling strategis dengan kapasitas produksi sebanyak 1,8 hingga 2 ton bahan baku per hari. Industri ini akan menghasilkan produk filet sebanyak 15 ton per bulan dengan persentase rendemen 30,4 %. Kebutuhan mesin dan peralatan dipilih berdasarkan kapasitas dan efektivitas produksi.
Grouper is one of the capture fisheries commodities that has great potential in national and international markets. Seeing this potential, the researcher wishes to establish a grouper filet processing industry, so it is necessary to conduct a business feasibility analysis. This study aims to determine the feasibility of establishing a grouper processing industry on the island of Java in terms of technical and technological aspects. The analysis includes determining the location of the industry, production process technology and the selection of machines and production tools. From the results of the study, it can be concluded that the grouper fish processing industry is feasible to run, judging from the results of the analysis of technical and technological aspects. This industry will produce filet products as much as 15 tons per month with a yield percentage of 30.4%. Machine and equipment requirements are selected based on production capacity and effectiveness.
