Abstract: Buah pepaya (Carica papaya L.) merupakan tanaman klimakterik yang mengandung banyak manfaat namun memiliki umur simpan yang singkat, yaitu sekitar 7 hingga 14 hari. Kitosan, salah satu bahan alami yang dapat diaplikasikan sebagai edible coating yang mampu memperpanjang masa simpan buah, salah satu sumber bahan bakunya berasal dari selongsong pupa maggot (Hermetia illucens). Penelitian ini bertujuan menguji aktivitas antifungal kitosan Black Soldier Fly terhadap Colletotrichum sp. penyebab antraknosa pada tanaman pepaya serta aplikasinya sebagai edible coating pada buah pepaya potong. Kitosan dilarutkan dalam asetat 2% dengan konsentrasi 25, 50, 75, dan 100 ppm. Larutan kitosan digunakan dalam uji aktivitas antifungal, serta diaplikasikan sebagai edible coating pada buah pepaya potong secara spray dan celup. Hasil penelitian menunjukkan bahwa penghambatan penyusutan bobot buah serta aktivitas antifungal terbaik terdapat pada kitosan konsentrasi 100 ppm dengan aplikasi coating secara spray. Aplikasi coating kitosan pada buah pepaya mampu memperpanjang masa simpan buah hingga 20 hari lebih lama dibandingkan kontrol.
Papaya fruit (Carica papaya L.) is a climacteric plant that has numerous benefits albeit with a short shelf-life, which is around 7 to 14 days. Chitosan, one of natural sources that can be applicated as an edible coating that can prolong the fruit’s shelf-life, can be sourced from maggot exuviae (Hermetia illucens). This study aimed to test chitosan’s antifungal activity against Colletotrichum sp. which causes antrachnose and its application as edible coating on cut papaya fruit. Chitosan was dissolved in 2% acetic acid. Chitosan solution are then used in antifungal test and also applied as edible coating on cut papaya fruit by spray and immersion method. Results showed that the best fruit weight-loss inhibition and antifungal activity was obtained on chitosan with concentration of 100 ppm with coating application by spray method. Chitosan coating application on cut papaya fruit can prolong its shelflife for up to 20 days longer than control group.
