Title: Analisis Kinerja, Nilai Tambah, dan Risiko Rantai Pasok Agroindustri Dodol (Studi Kasus di PT Herlinah Cipta Pratama)

Abstract: Dodol Picnic mengalami penurunan tingkat penjualan dodol pada masa pandemic. Menurunnya tingkat penjualan, berbanding lurus dengan menurunnya tingkat permintaan dodol dari konsumen. Hal itu merupakan permasalahan yang disebabkan karena pengelolaan rantai pasokan yang belum optimal. Oleh karena itu, perusahaan perlu menjaga dan meningkatkan kinerja rantai pasoknya. Penelitian ini bertujuan menganalisis struktur, kinerja, nilai tambah, dan risiko rantai pasok, serta merumuskan strategi peningkatan kinerja rantai pasok. Pengukuran kinerja menggunakan metode Supply Chain Operation Reference (SCOR) dengan model Analytical Hierarchy Process (AHP). Analisis perhitungan nilai tambah menggunakan model Hayami dan analisis risiko dengan metode House of Risk (HOR). Perumusan strategi peningkatan kinerja rantai pasok dengan metode Analytical Network Process (ANP) berdasarkan model Benefit, Opportunity, Cost, dan Risk (BOCR). Hasil pengukuran kinerja pada pengepul dan industri dodol diperoleh masing-masing 95,56% dan 88,76%. Analisis nilai tambah, didapatkan rasio nilai tambah dan keuntungan pengepul sebesar 0,3% dan 0,76%. Analisis risiko menghasilkan 8 risk event dan risk agent untuk pengepul, dan 21 risk event dan 18 risk agent untuk industri dodol. Terdapat masing-masing 5 dan 12 mitigasi risiko untuk pengepul dan industri dodol. Berdasarkan penilaian pakar, meningkatkan kualitas sumber daya manusia merupakan strategi peningkatan kinerja rantai pasok yang paling berpengaruh.
Dodol Picnic experienced a decrease in sales during the pandemic. The decline in the level of sales is directly proportional to the decline in the level of product's demand from customers. This is a problem caused by inadequate supply chain management. Therefore, companies need to maintain and improve their supply chain performance. This research aims to analyze the structure, performance, value-added, risk, and formulating supply chain performance improvement. Performance measurement uses the Supply Chain Operation Reference (SCOR) method with the Analytical Hierarchy Process (AHP) model. The Hayami model analyzes added value calculation and risk analysis using the House of Risk (HOR) method. Formulation of supply chain performance improvement strategy using Analytical Network Process (ANP) method based on Benefit, Opportunity, Cost, and Risk (BOCR) model. The performance measurement results on the farmers and dodol industry were 95.56% and 88.76%, respectively. Value-added analysis obtained the added value ratio and farmer's profit rate of 0.003% and 0.0027%, respectively. The risk analysis resulted in eight risk events and risk agents for farmers, and 21 risk events, and 18 risk agents for the dodol industry. There are 5 and 12 risk mitigations for farmers and dodol industry, respectively. The priority of farmer's risk mitigation actions is that harvesting is done on time, while the dodol industry is looking for alternative vendors. Based on expert judgment, improving the quality of human resources is the most effective supply chain performance improvement strategy.
