| Abstract: | Anak usia sekolah membutuhkan asupan gizi yang cukup dan memenuhi kebutuhannya untuk mendukung kegiatan belajar di sekolah. Bakso merupakan jajanan yang sehat karena mengandung protein dan kalsium yang tinggi dan bakso juga merupakan pangan yang cukup digemari di Indonesia. Tujuan penelitian ini adalah mendapatkan formula terbaik bakso daging sapi substitusi kerang darah sebagai pangan alternatif untuk anak usia sekolah. Hasil penelitian ini menunjukkan bahwa terdapat perbedaan yang signifikan pada warna, aroma, tekstur, rasa, aftertaste, keseluruhan, dan kadar zinc. Formula bakso terpilih adalah dengan substitusi kerang darah sebanyak 10% (F2). Bakso F2 memiliki kandungan protein sebesar 13,6 gram, zinc sebesar 2,28 mg/100g, dan kalsium sebesar 98,18 mg/100g. Kandungan zat gizi makro dan mineral zinc sudah memenuhi kontribusi zat gizi satu kali makan selingan terhadap AKG anak usai sekolah yaitu usia 7-9 tahun dan 10-12 tahun. Bakso formulasi F2 (10:90) ini mencapai klaim sumber protein dan sumber zinc. School-aged children need adequate nutritional intake and fulfill their needs to support learning activities at school. Meatballs are a healthy snack because it contain high protein and calcium and meatballs are also a fairly popular food in Indonesia. The purpose of this study was to obtain the best formula for beef meatballs substituted with blood clams as an alternative food for school-aged children. The results of this study indicate that there are significant differences in color, aroma, texture, taste, aftertaste, overall, and zinc levels. The selected meatball formula was substituted with blood clams as much as 10% (F2). Meatball F2 contains 13.6 g protein, 2.28 mg/100g zinc, and 98.18 mg/100g calcium. The content of macronutrients and zinc minerals has fulfilled the contribution of onetime snack nutrients to the RDA for children aged 7-9 years and 10-12 years. Formulation F2(10:90) claimed as the source of protein and zinc. |
