Abstract: | Cassava is an agricultural product that can be processed into various
foods. Cassava in Indonesia is available almost all year round and the price is
cheap. This has caused many entrepreneurs, especially Micro and Small
Enterprises (UMK) interested to open a food business with cassava as raw
material. Pak Bendot's Cassava Processing Business is an example of a micro
small business in Pekanbaru, Riau, which processes fresh cassava into dodol and
balado chips. This business will be developed by the local government into icon of
Pekanbaru. Therefore, this study aims to analyze the added value and profitability
of the cassava processing business with Pak Bendot's Cassava Processing
Business as the case. Hayami Method showed that the added value ratio of
cassava processed into balado chips was higher than the dodol. Profitability
analysis using break even point, MOS, and MIR shows that this business is
profitable. This business operates above the break-even point with the
profitability of processing dodol 42.86% and balado chips 68.12%. This business is sensitive to the increase in the price of its main costs. The increase of business
until 100% shows that this business is still profitable. Ubi kayu merupakan produk pertanian yang dapat diolah menjadi aneka makanan. Ubi kayu di Indonesia tersedia hampir sepanjang tahun dan harganya relatif murah. Hal tersebut menyebabkan banyak pengusaha makanan, khususnya Usaha Mikro dan Kecil (UMK) tertarik untuk membuka usaha makanan dengan bahan baku ubi kayu. Usaha Olahan Ubi Kayu Pak Bendot merupakan contoh usaha mikro di Kota Pekanbaru, Provinsi Riau, yang mengolah ubi kayu segar menjadi dodol dan keripik balado. Produk usaha ini akan dikembangkan oleh pemerintah daerah menjadi ikon Kota Pekanbaru. Oleh karena itu, penelitian ini bertujuan menganalisis nilai tambah dan profitabilitas usaha pengolahan ubi kayu dengan Usaha Olahan Ubi Kayu Pak Bendot sebagai kasus. Perhitungan menggunakan Metode Hayami menunjukkan bahwa rasio nilai tambah ubi kayu yang diolah menjadi keripik balado lebih besar dibandingkan yang diolah menjadi dodol. Analisis profitabilitas menggunakan indikator break even point, MOS, dan MIR menunjukkan bahwa usaha ini menguntungkan. Usaha ini beroperasi di atas titik impas dengan profitabilitas pengolahan dodol sebesar 42,86% dan keripik balado 68,12%. Usaha ini sensitif terhadap kenaikan harga ubi kayu, bahan penolong, dan upah tenaga kerja. Pengembangan kapasitas produksi sebesar 100% menunjukkan bahwa usaha ini masih menguntungkan. |
