dc.description.abstractMoisture absorber atau desikan merupakan teknologi kemasan aktif yang sering digunakan pada produk sensitif uap air. Desikan berfungsi untuk menyerap uap air dari luar produk agar tidak terserap oleh produk sehingga umur simpannya dapat lebih panjang. Banyak inovasi telah dilakukan terhadap moisture absorber salah satunya adalah dengan mencari bahan yang memiliki daya serap uap air yang lebih tinggi. Penelitian sebelumnya menemukan bahwa CaCl2 dan sekam padi teraktivasi dapat dikombinasikan menjadi desikan komposit. Dalam penelitian ini akan dilakukan perbandingan kinerja desikan komposit berbasis CaCl2 dan desikan komersial seperti silika gel dan clay. Perbandingan dilihat melalui pengukuran kapasitas serap uap air serta kemampuannya dalam memperlambat penurunan mutu produk. Produk yang akan digunakan adalah kerupuk ikan. Pengukuran kapasitas serap uap air dilakukan dengan metode gravimetri sedangkan pengamatan kemampuan desikan dilakukan dengan mengaplikasikan desikan terhadap produk lalu diamati perubahan kualitas fisik, maupun evaluasi sensorinya setelah produk disimpan. Hasil penelitian menunjukkan kapasitas serap uap air desikan komposit berbasis CaCl2 lebih tinggi daripada desikan komersial dilihat dari kenaikan bobot desikan setelah disimpan dalam jar tertutup dengan RH 90% pada 24 jam pertama. Desikan komposit mampu menyerap uap air yaitu sebesar 110% dari bobot awal sedangkan silika gel dan clay berturut – turut sebesar 30% dan 34%. dc.description.abstractMoisture absorber or dessicant is an active packaging often used for moisture sensitive products. Desiccant will absorb water vapor from outside of the product thus can extend the product shelf life. There are many innovations doing in moisture absorber such research as looking for materials with higher moisture absorption rate. Previous research found that CaCl2 and activated rice husk can be combined into composite desiccants. In this research, a comparison will be made between CaCl2 based composite desiccant performance and commercial desiccant performance such as silica gel and clay. The comparison can be seen through measurement of moisture absorption capacity and its ability to slow down product degradation such as fish crackers. Measurement of water vapor capacity will be carried out by the gravimetric method. Measurement of desiccant ability done by applying desiccant to the fish crackers. Physical and chemical quality as well as sensory evaluation of the product will be observed after storaging. The research showed that the absorption rate of composite desiccant was higher than the absorption rate of commercial dessicant seen from the increase of desiccant weight after being stored in a closed jar with RH 90% for 24 hours. Composite desiccant can absorb water vapor as much as 110% of the initial weight while silica gel and clay are 30% and 34%.
