| Abstract: | Rambai (Baccaurea motleyana Muell. Arg.) merupakan salah satu buah
langka yang ada di hutan hujan tropis Indonesia. Penelitian-penelitian sebelumnya
melaporkan bahwa rambai memiliki metabolit sekunder berupa fenol, flavonoid,
antosianin dan memiliki aktivitas antioksidan. Metabolisme tanaman sangat
dipengaruhi oleh faktor lingkungan, tahap pertumbuhan dan perkembangan
tanaman. Konsep umum yang digunakan untuk mempelajari hubungan antara
perkembangan tanaman dan faktor lingkungan adalah fenologi. Studi fenologi pada
tanaman rambai merah perlu dilakukan, mengingat informasi tersebut sangat
penting terutama untuk mengetahui fase-fase perkembangan tanaman rambai dan
menduga masa panen yang tepat untuk menghasilkan kuantitas dan kualitas buah
rambai yang terbaik. Oleh karena itu, penelitian ini bertujuan untuk melakukan
studi mengenai fenologi pembungaan dan perkembangan buah pada tanaman
rambai.
Penelitian ini merupakan penelitian eksploratif yang dilakukan di Taman
Buah Mekarsari Bogor pada Juni 2019–Juli 2020. Penelitian ini menggunakan
empat pohon rambai di lokasi yang sama sebagai sampel dan memilih 10 malai
bunga dan buah dari masing-masing pohon untuk diamati. Hasil penelitian
memberikan informasi bahwa fase fenologi bunga dan perkembangan buah rambai
dibagi menjadi 5 fase yaitu primordia bunga, panicle elongation, anthesis, seed
hardening, dan matang fisiologi yang membutuhkan satuan panas masing-masing
0, 252,15; 372,40; 1602,40; dan 2108,50oC hari sejak muncul tunas malai. Prediksi
waktu panen terbaik adalah pada umur 12–14 minggu setelah anthesis atau 1887,5–
2108,50oC hari setelah muncul tunas malai; secara fisik kulit buah telah berubah
warna menjadi hijau kekuningan dan mengalami kelunakan buah dan secara
kimiawi, buah memiliki tingkat kemanisan tertinggi dengan nilai padatan terlarut
total hingga 15,53oBrix dan asam tertitrasi total sebesar 3,25%. Rambai (Baccaurea motleyana Muell. Arg.) is one of the underutilized fruits found in tropical rainforests In Indonesia. Previous studies reported that rambai has secondary metabolites in the form of phenols, flavonoids, anthocyanins and has antioxidant activity. Plant metabolism is greatly influenced by environmental factors, the stage of plant growth and development. The general concept used to study the relationship between plant development and environmental factors is phenology. Phenological studies on red arillode rambai need to be carried out, considering that this information is very important, especially for knowing the phenological development phases, estimating the right harvest period to produce the best quantity and quality of its fruit. Therefore, this study aims to study the phenology of flowering and fruit development in rambai plants. This research is an exploratory research conducted in Mekarsari Fruit Garden, Bogor from June 2019 to July 2020. This study used four rambai trees in the same location as samples and selected 10 flower panicles and fruit from each tree to be observed. The results of the study provided information that the phases of flower phenology and development of rambai fruit (B. motleyana) were divided into 5 phases, namely flower primordia, panicle elongation, anthesis, seed hardening, and physiologically mature requiring heat units respectively 0, 252.15, 372.40, 1602.40, and 2108.50oC days since panicle shoots appeared. The best prediction of harvest time is between at the age of 12–14 weeks after anthesis, accordance with 1887.5– 2108.50oC days after panicle shoots appear, physically fruit peel has turned yellowish green and the fruit becomes soft. Chemically, the fruit has the highest level of sweetness with total soluble solids value up to 15.3 oBrix and total titratable acid 3.25%. |
