Abstract: Telur merupakan produk peternakan yang memberikan sumbangan terbesar bagi tercapainya kecukupan gizi masyarakat. Telur yang biasa dikonsumsi adalah telur hasil produksi ayam petelur atau ayam ras. Biasanya dalam program pengobatan dan pencegahan penyakit di peternakan digunakan antibiotika. Penggunaan antibiotika pada peternakan masih tidak sesuai dengan aturan pemakaian. Akumulasi antibakteri di jaringan tubuh atau telur akibat penggunaan obat-obatan dan dikenal sebagai residu. Penelitian ini bertujuan untuk menganalisis keberadaan residu antibiotika aminoglikosida, kualitas fisikokimia dan mikrobiologi serta mengevaluasi faktor-faktor risiko potensial yang terkait dengan mutu mikrobiologis telur ayam konsumsi di Wilayah Kota Jakarta Timur Provinsi DKI Jakarta. Penelitian ini menggunakan 100 sampel telur yang diambil dari 21 pasar tradisional dan 4 supermarket di Kota administrasi Jakarta Timur. Pengujian residu kanamisin menggunakan metode bioassay berdasarkan SNI 7424:2008, pengujian kualitas fisik telur dengan melakukan pengukuran berat telur, indeks kuning telur, indeks putih telur dan Haugh Unit serta pengujian kualitas mikrobiologis pada telur berdasarkan SNI 3926:2008. Pengolahan data menggunakan analisa deskriptif, uji- t untuk menganalisis uji kualitas fisik, uji Chi-Square univariat untuk mengetahui pengaruh faktor risiko potensial dengan kualitas mutu mikrobiologi dan model regresi logistik untuk menganalisis pengaruh faktor risiko potensial tanpa melihat interaksi dari faktor yang lain. Analisis data menggunakan program software SPSS versi 17.0. Hasil penelitian menunjukkan bahwa prevalensi residu kanamisin pada telur sebanyak 26.19% dari pasar tradisional dan 31.25% dari supermarket. Tidak ada perbedaan dari hasil pengukuran berat telur, IKT, IPT dan HU pada pasar tradisonal dan supermarket. Nilai median cemaran TPC, coliform dan E. coli masing-masing adalah 0.7 log cfu g-1, 1.5 NPM g-1, dan 1.5 NPM g-1 serta hasil cemaran Salmonella sp. adalah negatif. Tingkat kebersihan telur menjadi satu-satunya faktor potensial yang memiliki hubungan yang nyata dengan kemunculan cemaran coliform dan E.coli. Studi ini menunjukkan bahwa pada telur konsumsi yang dijual di Kota Administratif Jakarta Timur, ditemukan residu antibiotika kanamisin, kualitas mutu tergolong dalam kualitas III, kualitas mikrobiologi berada dibawah batas cemaran maksimum berdasarkan SNI 3926:2008 dan faktor kebersihan telur merupakan faktor risiko untuk cemaran bakteri coliform.
Eggs are a livestock product that provides a large contribution to people's nutrition needs. Eggs that are commonly consumed are eggs produced by laying hens. Usually, antibiotics are used in disease prevention and treatment program on farms. The use of antibiotics is still not according to the direction of use. The accumulation of antibacterials in the body tissues or eggs as a result of the use of drugs is known as a residue. The objective of this study was to analyze the presence of kanamycin residue, the physicochemical and microbiological quality, and to evaluate potential risk factors associated with the microbiological quality of chicken eggs in the administrative city of East Jakarta. The samples were 100 eggs taken from 21 traditional markets and 4 supermarkets in the administrative city of East Jakarta. Kanamycin residue tested using the bioassay method based on SNI 7424: 2008, the physicochemical quality test using the measurements of weight, yolk index, albumen index, and Haugh Unit (HU) and the microbiological quality method based on SNI 3926: 2008. Data were analyzed using descriptive analysis, t-test to analyze physicochemical quality, univariate Chi-Square test to determine the effect of potential risk factors on microbiological quality and logistic regression models to analyze the effect of potential risk factors without looking at the interaction of other factors. Data analysis were done by using the SPSS 17.0 software program. The results showed that the prevalence of kanamycin residues in eggs were 26.19% in traditional markets and 31.25% in supermarkets. No significant differences were observed in the measurement of the physicochemical quality in weight, yolk index, albumen index, and HU. The median of TPC, coliform and E.coli were 0.7 log cfu g-1, 1.5 MPN g-1 and 1.5 MPN g-1, respectively and the Salmonella sp test was negative. The level of cleanliness of eggs is the only potential factor that has a significant association with the coliform and E. coli contamination. It can be concluded that the commercial eggs sold in Administrative City of East Jakarta still found to be contained with kanamycin residue, the physicochemical quality is in quality III, the microbiological quality was below the maximum contamination limit based on SNI 3926:2008 and egg cleanliness was a risk factor for coliform contamination.
