      Higiene dan sanitasi tempat pemotongan hewan kurban di wilayah DKI Jakarta

      Abstract
      Penelitian ini bertujuan untuk mempelajari gambaran mengenai kondisi higiene dan sanitasi tempat pemotongan hewan kurban, gambaran tingkat kontaminasi mikroba pada daging hewan kurban serta melihat hubungan antara praktik higiene dan sanitasi terhadap kontaminasi mikroba pada daging hewan kurban. Data yang digunakan dalam penelitian ini merupakan data sekunder hasil pemeriksaan kesehatan hewan dan daging hewan kurban yang dilakukan oleh Fakultas Kedokteran Hewan Institut Pertanian Bogor (FKH-IPB) bekerjasama dengan Laboratorium Kesehatan Masyarakat Veteriner DKI Jakarta (Lab. Kesmavet DKI Jakarta). Responden berasal dari 46 tempat pemotongan hewan kurban di seluruh DKI Jakarta. Uji khi-kuadrat digunakan untuk mengetahui hubungan antara praktik higiene dan sanitasi tempat pemotongan terhadap kontaminasi mikroba dalam daging kurban. Hasil penelitian menunjukkan seluruh variabel tidak memiliki hubungan yang signifikan terhadap jumlah total mikroorganisme dan keberadaan E. coli pada daging (P value > 0.05).
       
      The research was conducted to observe the hygiene and sanitation at slaughter location during Idul Adha festival in DKI Jakarta, microbial impurities rates in meat, and relation between hygiene and sanitation practices to microbial impurities rates in meat. The data that were used in this study was a secondary data from sacrifice animal health examination which have been done by Veterinary Medicine Faculty of Bogor Agriculture University in collaboration with Veterinary Public Health Laboratory in DKI Jakarta. Respondens were taken from 46 slaughtering locations in DKI Jakarta. Chi-square test was used to know the relation between hygiene and sanitation practices to microbial impurities rates in meat. The result showed that all variable was not given significant correlation against the total number of total microorganism and the presence of E. coli in meat (P value > 0.05).
