Common carp is a freshwater fish which commonly consumed by Indonesian people. One of important nutrient contained in carp fish is fatty acid. The aim of this study was to determine the differences in chemical composition, the type and amount of fatty acids, and the baby common carp tissue at various harvesting times. The results of the analysis of fatty acids was that the baby common carp contain 5 types of SAFA, 1 type of MUFA and 3 types of PUFA fatty acids. The fatty acids contained in baby carp tends to vary at each harvesting times. Based on the observations of baby common carp tissue, it can be concluded that the number and size of myomere in baby fish increased as the increasing of the harvest time. The digestive system of baby common carp fish also depends on its harvesting time, mucus-secreting cells and absorber cells production increased as the increasing of the age. Baby common carp with older harvesting time also tends to have a more stable tissue
