Nowadays, world trade of fisheries give the positive trend, but there are many problems in food safety and quality. Traceability is important to be implemented. There are many method in traceability such as quality tracing and tracking, biotracing, etc. ISO 28000 can be a solution to ensure the safety of tuna supply chain from vessel, transit, plant, and export. The aim of this study is doing the assesment of traceability implementation in supply chain of frozen loin tuna with ISO 28000. The method was analyzed the security management in supply chain of frozen loin tuna, studied about critical risk in frozen loin tuna, determinated of network eficiency in supply chain of frozen loin tuna, and assesmented with ISO 28000. The result showed a poor food safety system in vessel and transit, but a good system in plant and export. The study in critical risk showed four critical risk which related with temperature, total microbe, and histamine. Network eficiency showed good result in process capability that means company can produced to be six sigma industry. The result of ISO 28000 assesment showed good result, but company needs continual improvement especially in management system and administration.
