Rabbit is a small livestock that has potentiality to produce meat as protein source from animal. Rabbit meat is known to have a high protein content with low cholesterol levels. Rex and Satin rabbits are known as dual-purpose, which is producing fur and meat. This study aims to determine the yields of carcass and commercial cuts of Rex and Satin rabbits. Studies were used 12 heads of male Rex and Satin rabbits that were slaughtered at the of more than 6 months. Variables measured were carcass characteristics and commercial cuts. Completely randomized design with treatment factors of breed (Rex and Satin rabbits) with 12 replicates were used in this study. Productivity of carcass and commercial cuts were no different between Rex and Satin rabbits. Slaughter weight, carcass weight and carcass percentage of Rex rabbits were 2 422.00 ± 256.40 g/head, 1 293.17 ± 190.55 g/head and 53.25% ± 3.60%, respectively, and Satin rabbits were 2 784.17 ± 381.25 g/head, 1 511.17 ± 181.51 g/head and 54.42% ± 2.20%, respectilely. The results of this research showed that the rabbit breed had a significant difference (P<0.05) to the weight of rabbit skin.
