Biosensor is an innovation in measuring antioxidant activity and antioxidant capacity that is easier, higher accuracy, by utilizing living things. Escherichia coli has been known to produce SOD (superoxide dismutase), which can be a good antioxidant sensor. The optimum conditions for antioxidant activity obtained by response optimizer were 30 oC, pH 9, and 150 mg zeolites for E. coli whole cells and 40 oC, pH 9, and 150 mg zeolites for the E. coli extract. KM app and Vmaks app values of the SOD from E. coli cells were determined by Hones-Wolf method. The KMapp and Vmaks app values were 0.2691 mM and 1.1806 μA, respectively. Stability of antioxidants biosensor using bacterial cells was relatively stable between 2 and 4 hours, and the antioxidant activity was only 56.35%.
