      Sifat Karkas dan Non Karkas Sapi Silangan Lokal pada Bobot Potong yang Berbeda

      Abstract
      The Objective of this study was to evaluate the effect of slaughter weight on carcass and non carcass characteristics from crossbred beef cattle at public slaughtered house. Eighty one male crossbred beef cattle were used in this research. The slaughter weight (SW) were classified into four groups, namely SW I (276-325 kg), SW II (326-375 kg), SW III (376-425 kg) and SW IV (426-475 kg). The data were analyzed by analysis of variance (ANOVA), further differences between treatments where tested by Duncan multiple range test. The results showed that differences in slaughter weight resulted in significantly different (P<0,05) carcass and non carcass component. Increased in slaughter weight from SW I (294.19 kg) to SW IV (451.67 kg) might caused increases in carcass and non carcass weight (P<0.05). Meanwhile, the percentages of carcass and non carcass particularly skin, shank and gastrointestinal track were not significantly (P>0.05) affected by slaughter weight.
       
      Penelitian ini bertujuan untuk mempelajari pengaruh bobot potong terhadap karkas dan non karkas pada sapi silangan lokal yang dipotong di rumah pemotongan hewan (RPH). Sebanyak 81 ekor sapi silangan lokal jantan digunakan dalam penelitian ini. Bobot potongnya diklasifikasikan pada empat kelompok yaitu BP I (276-325 kg), BP II (326-375 kg), BP III (376-425 kg), dan BP IV (426-475 kg). Data dianalisis menggunakan analisis ragam (ANOVA), selanjutnya jika terdapat perbedaan antar perlakuan maka dilakukan uji lanjut dengan uji jarak berganda Duncan. Hasil penelitian menunjukkan bahwa bobot potong berpengaruh nyata (P<0.05) terhadap sifat karkas dan non karkas. Bobot potong yang semakin meningkat dari 294.19 kg (BP I) menjadi 451.67 kg (BP IV) akan menyebabkan peningkatan pada bobot karkas dan non karkas (P<0.05). Sementara itu, persentase karkas dan non karkas terutama kulit, kaki dan saluran pencernaan tidak menunjukkan perbedaan yang nyata (P>0.05) terhadap bobot potong.
