      Karakteristik Karkas dan Non Karkas Sapi Potong pada Kerangka Tubuh yang Berbeda

      Abstract
      This study aimed to compare the characteristics of the carcass and noncarcass from different frame size. Sampel used as 36 heads of small frame size of cattle (Bali cattle), 16 heads of medium frame size of cattle (PO cattle) and 27 heads large frame size of cattle (crossbreed cattle). The data has taken from survey carcasses at 13 slaughterhouses. The variables measured were carcass and non-carcass characteristics. Carcass characteristics include live weight, carcass weight, fat weight and percentage of fat, while non carcass characteristics include non-carcass weight and percentage of non-carcass. Data was analyzed by using analysis of variance (ANOVA) and Duncan multiple range test. Frame size of cattle can affect carcass and non-carcass characteristics. Higher frame size can be increase the carcass weight (P<0.05). Medium frame size more efficient than other.
       
      Penelitian ini bertujuan untuk membandingkan produksi karkas dan non karkas yang dihasilkan sapi potong pada kerangka tubuh kecil, sedang dan besar. Ternak yang digunakan dalam penelitian ini adalah 36 ekor sapi kerangka tubuh kecil (sapi bali), 16 ekor sapi kerangka tubuh sedang (sapi PO) dan 27 ekor sapi kerangka tubuh besar (sapi silangan lokal). Data penelitian diperoleh berdasarkan survei karkas yang dilaksanakan di 13 Rumah Pemotongan Hewan (RPH). Peubah yang diamati adalah karakteristik karkas dan non karkas. Karakteristik karkas meliputi bobot potong, bobot karkas, bobot lemak dan persentase lemak, sedangkan karakteristik non karkas meliputi bobot non karkas dan persentase non karkas. Analisis data menggunakan sidik ragam (ANOVA) dan selanjutya diuji lanjut dengan uji Duncan. Kerangka tubuh sapi potong dapat mempengaruhi karakteristik karkas dan non karkas. Ukuran kerangka tubuh yang semakin besar akan meningkatkan bobot karkas (P<0.05). Sapi kerangka sedang lebih efisien untuk dikembangkan karena menghasilkan persentase karkas yang baik dan rendah lemak.
