Teacher’s elementary school perception on nutrition education media related to nutrition behavior and food safety

Abstract
Teacher had an important role toward the introduction of nutrition and food safety at school as a basic for student eating custom and safety development. Teacher standarization of nutrition and food safety knowledge would have an influence to the student knowledge. The teachers might be the sample for their student in eating nutrition habit and food safety. It remind us how important the meaning of nutrition education and food safety for students elementary school in order to formed good eating and healthy, so we need a teacher who good behavior related to the nutrition and food safety. The general purpose of this study was to analyze the influence of knowledge, attitude, practices related to nutrition and food safety toward the teachers perception on the nutrition education media according to the region and school accreditation, meanwhile the specific purpose of this study were (1) to analyze the social economic teacher’s characteristic, (2) to analyze the teacher’s knowledge, attitude, practices related to nutrition and food safety, (3) to analyze the teacher’s perception on media, such as moduls, leaflets, posters, flip chart and nutrition education booklets, and (4) to analyze the influence of nutrition behavior and food safety toward the teacher’s perception on nutrition education media. The design of the study was cross sectional study. The location of the study was at Lawanggintung 01 Elementary School (A accreditation) and Cimangu Kecil Elementary school (B accreditation) in Bogor urban, Pajeleran 01 Elementary School (A accreditation) and Kotabatu Elementary School (B accreditation) in Bogor rural. The teacher’s in this study were active teacher’s and had willing to filled the questionnaire and there were 68 teachers. This study was a part of the study “Developing Model of Healthy Street Food on Elementary School” by SEAFAST center–LPPM Bogor Agricultural Institute, the study started from July 2009 to June 2010. The primary data include the social economic characteristic (gender, age, level of education, length of worked as teacher, family member, and level of family income), behavior (knowledge, attitude, practice) related to nutrition and food safety, teachers perception to the nutrition education media. The primary data did by filling the questionnaire. Secondary data include the general school condition which got from questionnaire. Data processing and analyzing were processed by computer programme microsoft excell and Statistical Program for Social Science (SPSS) version 16.0 for windows. Generally female techers (75%) were more than male (25%). The age of the teaches at middle aged group (61.8%) and the average of the teachers age both male of female were 42.3 years old. The level of elementary teacher school were S1 (47.1%) and diploma (47.1%), the length of worked as teacher between 21-30 years (42.6%), whereas family member 77.9%, teacher family which was include small family category (≤ 4 person), 55.9% teachers had income in the range Rp500 000 – Rp1 000 000 capita/month. The result of the analysis showed that 50% teacher elementary school had medium knowledge about nutrition and food safety, but when it viewed from school accreditation it told that the school which had A accreditation (medium category 54.76%) was better than school which had B accreditation (approximately category 46.15%). The average score of the nutrition knowledge and teacher food safety in the Bogor urban and rural were same 58.4±12.2 and 60.6±11.5. 55 % of teachers had positive mindset related to the nutrition and food safety. Depend on the district, the average score of teacher elementary school toward nutrition attitude and food safety was 78.2±8.2 and 79.3±6.9, but according to the accreditation it showed that elementary school which had B accreditation (80.4±8.82) was better than A (77.7±6.5). 97.1% teachers were in category in practicing nutrition and food safety. Based on the area, the average of nutrition practice and food safety were same even the urban (71.8±3.4) or rural (70.8±6.2), and also A accreditation (72.4±5.4) and B (69.5±3.72). Family member showed the positive relationship with nutrition attitude and food safety, p<0.1. The more teacher’s family member, the more positive nutrition attitude and food safety of teacher elementary school. Age and length of work had relation with nutrition practice and food safety (p<0.1). female teacher and the teacher who real had longer work, they had better nutriion practice and food safety. The result of descriptive analysis toward teacher’s perception about how important the food matery, nutrition and healthy showed the average assessment the most important and important, such as 79.2% and 20.6%. teacher’s perception to the use of several medias rated strongly agree (96.9%) that five types of media were used in learning. Perception was indicated most of the teachers strongly agree 66.2% and agree 33.7% to the material presentation in every nutrition media aducation. Overall as many as 54.1% and 45.9% the teacher strongly agree and agree to the written presentation of nutrition media education. The assessment strongly agree and agree (59.5% and 40.2%) were declared in the image presentation. The result of the statistical showed a significant effect between nutrition practice and food safety teacher elementary school o perception nutrition and healthy material (p<0.1, r²=0.071). Teacher’s perception in used media when presented the food material, nutrition and health were influenced positively by nutrition knowledge and food safety of teacher elementary school (p<0.1; r²=0.139), meanwhile the nutrition practice and safety food of teacher elementary school also positively influenced to the perception (p <0.1; r²=0.139).
