      Abstract
      The coloring substance abuse for food often happens. In addition, the environment has been broken causes the formation of free radicals. Both of them can be very harmful to human health. Antioxidants have benefits in health, one of them is stabilizing free radicals. Many plant species can be as safety natural food colorants and has a pharmacological effect. The colour of wood Surian is red and the fill of porouse deposit brownish-red, so the substances of extractives Surian wood can be used as natural food colorants. In addition, the substances of extractives which cause color generally potential for source of antioxidants (containing anthocyanins). This research aims to examine the antioxidant activity, acute toxicity, and the level of public preferences for natural food colorants from substances of extractives distillation residue and boiling waste matter of distillation Surian tree.
       
      Penyalahgunaan pemakaian zat pewarna untuk bahan pangan seringkali terjadi. Selain itu, lingkungan yang mulai rusak menyebabkan terbentuknya radikal bebas. Kedua hal tersebut sangat berbahaya bagi kesehatan manusia. Antioksidan memiliki manfaat yang luas dalam bidang kesehatan, salah satu diantaranya yaitu menstabilkan radikal bebas. Banyak jenis tumbuhan yang dapat dimanfaatkan sekaligus sebagai pewarna alami makanan yang aman dan memiliki efek farmakologis. Kayu Surian berwarna merah dan isi porinya berupa endapan merah kecoklatan, sehingga zat ekstraktif kayu Surian dapat dijadikan sebagai pewarna pangan alami. Selain itu, zat ekstraktif yang menimbulkan warna umumnya berpotensi menjadi sumber antioksidan (mengandung antosianin). Penelitian ini bertujuan untuk menguji aktivitas antioksidan, toksisitas akut dan tingkat kesukaan masyarakat terhadap pewarna pangan alami dari zat ekstraktif residu hasil penyulingan dan perebusan ampas penyulingan pohon Surian.
