      Abstract
      Buffalo is a potential meat producing animal. There is an increasing demand of buffalo meat in Indonesian. The study was aimed to examine the fatty acids composition and chemical characteristic of meat from cattle and buffalo fatten on feedlot ration supplemented by protected lemuru fish oil in the form of dried carboxylate salt mixture (DCM). The research used six swamp buffalo and eight Ongole grade cattle. They were assigned to 2x2 factorial model with two animal species (cattle and buffalo) and two level ration (suplemented and not supplemented ration with dried carboxylate salt).The results of this study showed that swamp buffalo and Peranakan Ongole cattle fatten on feedlot ration using protected lemuru fish oil in the form of DCM, produced meat with similar chemical characteristic. Meanwhile, they were significant interaction between ruminant species and ration on fatty acid composition. In buffaloes the addition of the protected lemuru fish oil could significantly decreased (p<0,05) the saturated fatty acid but significantly (p<0,05) increased the unsaturated fatty acid in meat. However, this was not the case for cattle.
