      Abstract
      Peranakan Ongole cattle and buffalo are meat producing ruminants commonly found in Indonesia. The study was aimed to examine the carcass yield and meat quality from local cattle and buffalo fattened on feedlot ration supplemented by protected lemuru fish oil in the form of dried carboxylate salt mixture (DCM). They were fattened for approximately 2,5 month. The experiment used six swamp buffalo and eight Peranakan Ongole cattle. The data was analyzed by factorial design with two factor treatment. The first factor was species (cattle and buffalo) and the second factor was ration (supplemented and non supplemented ration with dried carboxylate salt). The result showed that they were no interaction between species and ration on carcass productivity and meat quality characteristics. Carcass productivity and meat quality characteristics were not influenced by ration treatment’s factor. However, bone, tenderness, meat color and fat color were significantly influenced (P<0,05) by species. Buffalo carcass contained less bone compare to Peranakan Ongole carcass. The meat from buffalo was significantly more tender, darker in color, and the fat was lighter in color compare to beef.
