Indramayu is the big anchovy producer in West Java. Anchovy has high selling price fish export, so it caused a lot of processing anchovy companies springing up in Indramayu, one of the company is CV. Sumber Rejeki. So the purposes of this research is to compare practical and theoretical management business of anchovy in CV. Sumber Rejeki, which includes: 1) find out the management of the anchovy raw material; 2) review management production of anchovies start from processing until marketing; and 3) assessing quality management anchovy’s dry products. The methods which used are technical and descriptive analysis, analysis of the classification of production pattern, and quality control analysis using quality control p chart. Collecting data used techniques snowball sampling by observations and an interview with samples. The result showed that the management of raw materials in CV. Sumber Rejeki has not been good for lack of control on raw material. The difference in price anchovy between fishermen and the suppliers is Rp 1.000 up to Rp 2.000. Processing anchovy in general are consisting of two processes that will be divided into the processes that more detail, meanwhile in the marketing export products, CV. Sumber Rejeki cooperate with exporting company. Chirimen product is having quality standard, based on quality analysis, quality of anchovies product by CV. Sumber Rejeki is uncontrolled. They sale 80% (222.525 kg) domestic products and 20% (55.072 kg) export products.
