      Abstract
      Liquid tapioca waste contains part of starch that is not extracted and other components that dissolved in water. An alternative in waste handling is through biotechnological processes using Acetobacter xylinum that will produce nata. Nata is cellulose produced by bacteria so called bacterial cellulose. Bacterial cellulose can be used as basic material for cellulose membrane and can be acetylated with anhydryda into cellulose acetate to increase its economic value. The result showed that the cellulose acetate had acetyl value of 40.38% (corresponded to degree of substitution 2.2 to 2.7) and moisture content of 21.49%. Capability cellulose acetate membranes was measured by its water flux and sucrose rejection. The highest average flux value is showed by the membrane with a pressure of 7.5 psi which was 192.74% L/m2.hour. The flux value indicated that the membrane was a mikrofiltration membrane. The index of rejection in the membrane was 27.17%, meaning that particles of sucrose concentration of 1000 ppm feed was separated 271.7 ppm from the total feed.
       
      komponen selain pati yang terlarut dalam air. Alternatif penanganan limbah ini dapat dilakukan melalui proses bioteknologi dengan bantuan Acetobacter xylinum yang akan menghasilkan nata. Nata ialah selulosa yang dihasilkan oleh bakteri sehingga disebut sebagai selulosa bakteri. Selulosa bakteri dapat dijadikan sebagai bahan dasar membran selulosa dan dapat diasetilasi menjadi selulosa asetat dengan anhidrida untuk meningkatkan nilai ekonomisnya. Hasil penelitian menunjukkan bahwa selulosa asetat memiliki nilai kadar asetil sebesar 40.38% (setara derajat substitusi 2.2−2.7) dan kadar air sebesar 21.49%. Kemampuan membran selulosa asetat diukur berdasarkan nilai fluks air dan indeks rejeksi sukrosa. Nilai fluks rerata tertinggi dimiliki oleh membran dengan tekanan 7.5 psi sebesar 192.74 L/m2.jam. Nilai fluks tersebut menunjukkan bahwa membran yang diperoleh dalam penelitian ini adalah membran mikrofiltrasi. Rerata indeks rejeksi pada membran sebesar 27.17% yang artinya partikel sukrosa dari konsentrasi umpan 1000 ppm yang terpisah sebesar 271.7 ppm.
