Identifikasi dan uji stabilitas substrat antimikroba dalam yogurt probiotik susu kambing peranakan etawah dan saanen (pesa)
Abstract
Probiotic yogurt was one of the fermented milk products known as functional food. Probiotic yogurt can be made from goat's milk and cultureed with 55 of different lactic acid bacteria starter such as Lactobacillus bulgaricus, Streptococcus thermophilus, Lactobacillus acidophillus, and BIfidobacterium longum. This research was conducted to identify the antimicrobial substances of saanen and etawah breed's probiotic yogurt and their stability on different level of pH and temperatures.
